142.0…Strawberry Vanilla Almond Granola
Another winning granola recipe was created in my kitchen.
I love homemade granola and it's beyond easy to make. The best part is is that you can customize it with whatever ingredients you like. This recipe has a ton of my favorites.
Strawberry Vanilla Almond Granola (Makes 3 cups)
Ingredients:
1 cup strawberries, washed and hulled
2 cups old-fashioned rolled oats
1 cup almonds, roughly chopped
1 tsp. cinnamon
1/2 tsp. salt
1 Tbsp vanilla bean paste (or vanilla extract)
3 Tbsp butter, melted
1/2 cup honey
1 cup dried strawberries or cranberries
Directions:
1. Preheat oven to 325 degrees. Blend strawberries in a blender or food processor until pureed. Set aside. In a large bowl, combine oats, almonds, cinnamon and salt. Stir in pureed strawberries.
2. Mix vanilla into melted butter. Stir honey into butter mixture. Pour vanilla-honey-butter mixture over oats mixture; stir to combine.
3. Spread granola on a baking sheet in a thin layer. Bake for 20 to 25 minutes, stirring every 5 to 7 minutes. Remove from oven and let cool for one hour. Fold in dried strawberries or cranberries, as desired. Store in an airtight container.
Last night my son went to a birthday sleep over at a friend's house. My husband was away so it was just my daughter and I. I took her to California Pizza Kitchen for dinner. I had the Tricolore Pizza.
We had a great "ladies night" together!
Breakfast this mooring was scrambled egg beaters with salsa, chicken sausage, green onions and cheddar cheese.
We picked up my son and came home. Today has been spent tackling my to-do list. I'm making great headway.
Lunch was roasted salmon and a Caesar salad.
A little while ago, I decided I was hungry. Cascadian Farm recently sent me these Peanut Butter Chocolate Chip Chewy Bars to try.
I might have to say it was the best granola bar I've ever eaten. Crunchy, chewy, salty and sweet. Perfect!
