142.8…Oatmeal Cranberry White Chocolate Chunk Cookies
The baking bug hit me this afternoon.
I have a plethora of Ocean Spray Craisins in my pantry because my daughter is obsessed with them. I decided to try the recipe for Oatmeal Cranberry White Chocolate Chunk Cookies that were on the back of the package. Good thing I did…they are delicious!!
Oatmeal Cranberry White Chocolate Chunk Cookies (Makes about 2 1/2 dozen cookies)
Recipe slightly adapted from Ocean Spray
Ingredients:
2/3 cup butter, softened
2/3 cup brown sugar
2 large eggs
1 1/2 cups old-fashioned oats
1 1/2 cups flour
1 tsp. baking soda
1/2 tsp. salt
1 cup craisins/dried cranberries
1 cup white chocolate chunks or chips
Directions:
1. Preheat oven to 375.
2. Using an electric mixer, beat butter and sugar together in a medium mixing bowl until light and fluffy. Add eggs, mixing well.
3. Combine oats, flour, baking soda and salt in a separate bowl. Add to butter mixture in several additions, mixing well after each addition. Stir in dried cranberries and white chocolate chunks/chips.
4. Drop by rounded teaspoonfuls onto ungreased cookie sheets. Bake for 10-12 minutes or until golden brown. Cool on wire rack.
Last night I reheated the rest of the Coconut Curry Chicken, basmati rice and peas for dinner.
Breakfast this morning was half a bagel with cream cheese and lox and half a grapefruit.
I went to the gym, got my nails done, then headed home for lunch.
Same as yesterday: turkey sandwich, Creamy Cole Slaw and Mexican Bean Salad.
