142.8…Roasted Asparagus
To go along with the Dijon Tarragon Cream Chicken I made the other night, I served Roasted Red Potatoes and Roasted Asparagus. The asparagus turned out perfectly. Of course it did…it was a Barefoot Contessa recipe!
Roasted Asparagus (Serves 4)
Recipe slightly adapted from Barefoot Contessa
Ingredients:
1 lb. fresh asparagus
Olive oil
Salt & freshly ground black pepper
Directions:
1. Preheat oven to 400 degrees.
2. Break off the tough ends of the asparagus. Place the asparagus on a baking sheet, drizzle with olive oil, then toss to coat the asparagus completely. Spread the asparagus in a single layer and sprinkle liberally with salt and pepper.
3. Roast the asparagus for 15 minutes, or until tender and crisp.
Wednesday night after my son's basketball game, we met my sister in law for dinner at Mia Francesca. We all shared a Caesar salad and Bruschetta:
For my entree, I ordered one of my favorites, Salmone alla Fresca (roasted salmon with tomato, avocado, red onion, olive oil, basil and lemon over grilled asparagus):
After dinner, we went to Swirls for frozen yogurt. They had my favorite, Salted Caramel Pretzel, so I couldn't resist. And topped with Heath Bar bits=perfection.
Yesterday morning's breakfast was pineapple Chobani yogurt, Strawberry Vanilla Almond Granola and mixed berries.
I went with my friend Denise to a spin class in Encinitas. It was awesome. You were a chest band that projects your stats (heart rate, calorie count, etc) on a TV so the whole room can see. Very motivating!
After spin, I met some friends at Love Boat Sushi. I shared a few things with Alicia: yellow tail sushi:

I ran some errands, picked the kids up from camp and then we were off to a work event for my husband at the Chargers game! It may only be preseason, but I'm SO excited that football season is back!
I did some work on these chips and dips as well as some sliders.

It was a great game with the Chargers beating the Cowboys 27-7. Go Chargers!
Breakfast this morning was scrambled egg beaters with salsa, onions, cheddar cheese and parsley.
I took the kids to camp, went to a PTO meeting, ran some errands and came home for lunch. Turkey sandwich, veggies and ranch.
Tonight is a lazy night at home…the best!
