143.8…Roasted Red Potatoes
As promised, here is the recipe for the Roasted Red Potatoes that went along with the Dijon Tarragon Cream Chicken I made the other night. The recipe should serve four but my husband declared them the best potatoes ever and almost ate them all.
Roasted Red Potatoes (Serves 4)
Ingredients:
4 red potatoes
1 Tbsp olive oil
2 Tbsp bread crumbs
1 Tbsp parmesan cheese
Seasoning salt to taste
Garlic powder to taste
Directions:
1. Preheat oven to 375 degrees.
2. Slice potatoes into wedges and place in a bowl. Toss in olive oil until coated and then add all remaining ingredients and toss until evenly coated.
3. Bake in preheated oven 30-45 minutes or until desired degree of crispness, turning wedges over halfway through baking.
My sister in law is in town for work so we met for dinner last night at Sammy's Woodfired Pizza. We shared Lebni Mediterranean Soft Cheese (exotic spices, tomatoes, olive oil, grilled herb flatbread), Calimyrna Fig & Gorgonzola Flatbread (caramelized onion, spinach):
Both were amazing!!!
Of course a meal at Sammy's wouldn't be complete with my favorite salad, The Original Chopped Chicken Salad:
Breakfast this morning was Honey Nut Cheerios with almond milk.
After camp drop offs, I went to an appointment and then ran some errands. Lunch was leftovers from yesterday's dinner.
The flatbread was also excellent cold. :)
Cold pizza. Yes or no?
