143.4…Greek Salsa with Pita Chips
Every quarter or so, several couples in the neighborhood get together for our "Couples Mixer." A different person in the group hosts each time and everyone is to bring a bottle of wine and an appetizer. Last night was the mixer at Lisa's house. I decided to make Greek Salsa with Pita Chips for my appetizer. It's light and refreshing and easy to put together.
Greek Salsa with Pita Chips
Recipe from Phillis Carey
Ingredients:
1 cup diced seeded plum tomatoes
1/2 diced red bell pepper
1/2 cup diced cucumber
2 Tbsp. chopped green onion
1 Tbsp. chopped fresh oregano
1 garlic clove, minced
2/3 cup crumbled sheep's milk feta cheese
2 Tbsp. extra-virgin olive oil
4 tsp. red wine vinegar
Salt and pepper to taste
Pita chips for serving
Directions:
Combine all ingredients. Serve with pita chips.
Friday night I had no energy to make anything exciting. This is when spaghetti and jarred marinara comes into play.
Breakfast yesterday morning was a toasted English muffin, fried egg and cheddar cheese.
I went grocery shopping and did laundry as well as make the Greek Salsa dip along with brownies (recipe coming) for Lisa's house.
Lunch was a turkey sandwich, veggies and ranch.
When we arrived at Lisa's last night for the Couples Mixer, her house looked beautiful and was perfectly set up for a party!
I started taking photos of appetizers as they arrived but they started arriving so quickly that I gave up.
There was about 20 more things that looked like the above. Delicious plates of appetizers. I much rather eat a bunch of appetizers than a big dinner any time. The party was fun…the house was packed, the wine was flowing and there was food everywhere. What's not to like!?!
Breakfast this morning was scrambled egg beaters with green onions, cheddar cheese and an English muffin.
Can't say lunch was that exciting. Repeat of yesterday's lunch.
I just whipped up another dessert that I'm taking to a friend's house tonight. Excited to see how this one turns out!
