144.0…Make It Saucy
I made a simple dinner Wednesday night that looked like a fancy one that I slaved over the stove for. I made my Amazing Salmon recipe, along with Trader Joe's frozen mashed potatoes and steamed broccoli.
Thursday morning's breakfast was scrambled egg beaters, broccoli, salsa and cheddar cheese.
After I dropped the kids off at school, I went to a PTO meeting, followed by cooking class at Great News. This class was called "Make It Saucy" taught by Phillis Carey. It was all about the sauces!
The first recipe was Achiote Seasoned Salmon Fillets with Orange Saffron Beurre Blanc:
The sauce was incredible…check out the color!
The second recipe was Chicken Breasts Flambé in Tarragon-Tomato Wine Sauce served with orzo:
This was delicious….very light and fresh!
The next recipe was Soy-Glazed, Pan-Roasted Pork Tenderloin with Shiitake Mushroom Hollandaise Sauce with sautéed spinach:
The one was my favorite…you cannot go wrong with hollandaise. Ever.
The last recipe was dessert: Chocolate-Chocolate Chip Torte with Chocolate Caramel Sauce and Ice Cream:
So chocolately and rich and fabulous. You definitely need the ice cream to go with it!
After class, I went to an appointment, then picked up the kiddos.
Last night we went with some friends to the Padres game. We enjoyed a buffet dinner before the game.
During the game, I shared a pretzel with my friend. We had a great time, but unfortunately the Padres lost.
Breakfast this morning was a toasted waffle with peanut butter and half a grapefruit.
I took the kids to school, went to a meeting then to Cardio Muscle class. Then it was another meeting (!!) followed by lunch at Marketplace Grill. I had a Grilled Chicken Greek Salad.
Now we are home from school and I'm exhausted. I'm not used to these crazy school weeks yet! The weekend could not come soon enough!
