I have spent the whole weekend at home and it has been glorious. We travel so much that it’s rare to spend an entire weekend at home. I enjoyed every minute of it.
Friday night’s dinner was leftover Turkey Taco Soup. I really love this stuff.
Breakfast yesterday morning was scrambled egg beaters, spinach, onion and jack cheese.
I spent time relaxing on the couch (which I rarely do) and catching up on email, laundry, etc. Lunch was chicken salad with mixed greens.
I tried a new salmon cooking technique I saw on Pinterest for dinner last night. I put some asparagus on foil and topped with salmon. I made a mixture of butter, parmesan cheese, minced garlic, lemon juice and pepper to go on top. I wrapped it all up and baked at 375 for 30 minutes.
While it was good, it wasn’t my favorite salmon recipe. I like how easy it was to make but the asparagus were over cooked and I feel like the salmon was a bit too.
Breakfast this morning was the same as yesterday.
Lunch was more Turkey Taco Soup and a green salad.
I need to save up my calories for tonight is WING NIGHT!!!!!
