144.2...Turkey Taco Soup
Awhile ago, my sister in law gave me a recipe for a Turkey Taco Soup that I’ve been meaning to make. I made it last night and I’m so glad I finally did! It’s filling, healthy and delicious! A trifecta!
Turkey Taco Soup (Serves 6-8)
Ingredients:
1 Tbsp olive oil
1 lb. ground turkey
1/2 yellow onion, diced
1 package taco seasoning or my recipe for Homemade Taco Seasoning
2 cloves garlic, minced
1 quart low sodium chicken stock
28 oz. can crushed tomatoes
4 oz. can diced green chilis
16 oz. package frozen corn
Directions:
1. Heat a large pot or Dutch oven over medium high heat. Add the olive oil, then the ground turkey, breaking into smaller pieces. Add the onion and cook until turkey is done and onions are soft.
2. Add the taco seasoning and garlic and cook for 1-2 minutes.
3. Add the remaining ingredients and simmer soup for 30-45 minutes.
Here are some topping ideas for the soup: sour cream, shredded cheese, crushed tortilla chips, diced green onion
Seriously delicious and easy to make too!
Breakfast this morning was scrambled egg beaters with onions, spinach and jack cheese.
I took the kids to school, went to an event for my daughter’s class, then off to the gym for spin class. It was the same instructor as last time, so I knew I was in for a killer workout.
No joke. 658 calories later, I was spent. Done. I can’t remember the last time I burned that many calories in a class.
I ran to the grocery store to pick up some stuff for the weekend. Lunch was chicken salad (rotisserie chicken, diced celery, diced tomatoes, mayo, garlic salt and celery seed) and a mixed green salad with Girard’s Light Champagne dressing. This is one of my favorite bottled dressings ever, by the way.
This weekend we are not traveling or doing much of anything. I am looking forward to a quiet, relaxing weekend at home!
