144.4...M&M Blonde Brownies
I went into a baking frenzy yesterday. The baking bug hit and I got to work. First was three loaves of Bernice’s Pumpkin Bread. I know it’s not fall but I have a bunch of cans of pumpkin that have been staring at me, pleading with me to use them.
Next up was another winning recipe from Pinterest! M&M Blonde Brownies!
M&M Blonde Brownies
Recipe from BruCrew Life (via Pinterest)
Ingredients:
1/2 cup butter, softened
2 cups brown sugar
2 eggs
1 tsp. vanilla
1 tsp. salt
2 tsp. baking powder
2 cups flour
1 1/2 cups M&M candies
Directions:
1. Beat the butter and brown sugar until creamy. Add the eggs and vanilla and beat again. Sift together the salt, baking powder, and flour. Slowly beat into the butter mixture. Stir in 1 cup of the M&M candies by hand.
2. Spread the batter in a greased 9x13 baking dish. Sprinkle the top with the extra 1/2 cup candies. Bake at 350 degrees for 23-25 minutes. Let cool completely before cutting into squares. Makes 24 bars. Store in a sealed container.
These were a GIANT hit with the family. Now I need to try and stay away from them so I won’t eat the entire pan.
I went on a class field trip with my daughter on Friday. She asked me a question about sushi randomly and that got me thinking: I could really use some sushi in my life. As soon as the field trip was over, I headed over to Sushiya for lunch.
I left extremely happy.
Later on I brought the kids home from school. I wasn’t super inspired to make anything fancy for dinner so I opted for spaghetti and marinara.
Breakfast yesterday was scrambled egg beaters with roasted red potatoes, spinach, onions and cheddar cheese.
I baked all day, did laundry and not much of anything else. Lunch was tuna salad on butter lettuce tossed with Girard’s Light Champagne Dressing:
Early in the day, I threw some chicken, salsa and taco seasoning in the crockpot (recipe coming) and we had Crockpot Chicken Tacos as well as Easy Mexican Rice (recipe coming) for dinner:
Another big hit!
This morning it was scrambled eggs again. This time I switched the potatoes for diced avocado.
We have another lazy day planned for today. I love it!
