146.8....The Busy Suitcase
Sunday afternoon we went to my sister in law’s to celebrate my nephew’s birthday. We enjoyed some Persian food for dinner. Beef kabobs, rice and salad:
Dessert was berry pie and vanilla ice cream:
Breakfast yesterday morning was Honey Nut Cheerios and almond milk.
I took the kids to school, went to Cardio Muscle class, ran some errands then home for lunch. Tuna salad and celery sticks:
Dinner last night was Chicken Enchiladas that I had frozen along with a fresh batch of Easy Mexican Rice and refried beans.
I also made a salad to go along with it in order to get some green in the meal.
Breakfast this morning was scrambled egg beaters with spinach, salsa and cheddar cheese.
I just dropped the kiddos off at school and am at Starbucks waiting for my cooking class at Great News to get started! Tomorrow I’m headed to Cabo San Lucas for a company trip for my husband. Just when I finished unpacking from the last trip…..no need to put the suitcase away!
What is your favorite frozen meal to keep on hand? Trader Joe’s Orange Chicken!
