146.6...It's Tea Time
The “Tea” classes at Great News are always one of my favorites. They happen a couple of times a year and yesterday was one of those times! I love all the tea type of recipes. They make great appetizers for parties too!
The first plate contained the three savory recipes we tried. On the top of the plate was Roast Beef and Blue Cheese Tea Sandwiches with Roasted Peppers and Arugula:
The middle recipe was Tarragon Caper Egg Salad Sandwiches with Smoked Salmon.
The final savory recipe was Spinach Soufflé and Prosciutto Tarts.
All three were delicious! I’m not the biggest blue cheese fan but the roast beef sandwich was excellent…would be even better with Boursin cheese!
We had two sweet tea treats: Crystallized Ginger Cream Scones and Chocolate Brownie Truffles with Espresso Sugar Coating:
I loved both. The scones were unique and fabulous. The truffles were outstanding and super easy to make. Another great class by Phillis Carey!
Last night’s dinner tacos with all the fixings and Easy Mexican Rice that I frozen from the last time I made it.
Breakfast this morning was scrambled egg beaters with salsa and cheddar cheese.
The kids are officially on spring break so there was no crazy morning rush to school today. Instead I ran some errands, went to a couple appointments and stopped for lunch at Sushi Hana. My lunch started with miso soup.
Next was salmon, yellow tail and tuna sushi:
I tried the TNT roll. Not crazy spicy but it was good!
Dinner tonight was roasted salmon and a Caesar salad. Easy.
Do you have a favorite tea sandwich/other item? I have to admit, I love simple cucumber sandwiches!
