147.2...Thank You Trader Joe's
Thank you Trader Joe’s for allowing me to be lazy. After my trip to Las Vegas, I didn’t feel like doing much on Monday. I picked up some groceries at Trader Joe’s and grabbed this Mexicali Salad for lunch.
Was low calorie and pretty darn good tasting. And I didn’t have to do anything.
Same thing at dinner:
This was pretty good as well but I think I’d add some spices to it next time. I did sauté some zucchini and made a salad so I did a tad bit more than nothing.
Breakfast yesterday was a poached egg on a toasted English muffin topped with avocado with a half a grapefruit on the side.
After I took the kids to school, I went to Great News for a cooking class taught by Phillis Carey. The class was “Simple Elegant Pasta Dishes.” The first recipe was Spaghetti with Clams, Lemon, and Parsley:
Loved this. It was fresh and delicious. Loved the garlicky sauce!
The second recipe was Fusilli with Shrimp, Saffron, Sun-Dried Tomatoes, and Fresh Oregano:
Fabulous…great sauce!!! I may have to try this at home with chicken for the husband.
The next recipe was Chicken and Asparagus Bow Tie Pasta with Mustard, Thyme Sauce and Feta Cheese:
Loved the mustardy sauce. Another winner!
The last pasta recipe was Italian Turkey Sausage and Pesto Linguine:
Hearty and amazing. By this point though, I was pasta’d out. I did save room for dessert though….
Espresso Panna Cotta with Dark Chocolate Curls:
Yum! I would definitely top it with more chocolate curls.
Last night we celebrated Cinco de Mayo at our club. I enjoyed their fabulous carne asada tacos, enchiladas and salad.
Don’t forget dessert!
Dulce de Leche mini cupcakes and churro bites.
Breakfast this morning was the same as yesterday.
After I took the kids to school, I went to spin class to burn off my Cinco de Mayo eats. I think I did a good job.
I met Alicia for lunch at Blue Smoke Sushi Lounge in Fashion Valley. We shared a bunch of fabulous sushi. Our favorite Wasabi Roll:
I don’t think I could ever get sick of sushi.
