144.0...Velvet Ginger Chicken with Orange Sesame Noodles
I’m really excited to share last night's dinner with you. It was a giant hit in my house. Not the easiest recipe in that there was a bunch of prep work but a lot of it can be done ahead. If you like Asian style noodles, you’ll love this recipe for Velvet Ginger Chicken with Orange Sesame Noodles.
Velvet Ginger Chicken with Orange Sesame Noodles (Serves 4)

Ingredients:
Chicken and Marinade:
3 boneless, skinless chicken breasts
1 egg white
1 Tbsp. dry Sherry
1 Tbsp. cornstarch
Pinch salt
Noodles and Seasoning:
8 oz. dried spaghetti
3 Tbsp. vegetable or grapeseed oil
1 Tbsp. minced fresh ginger
4 cloves garlic, minced
2 Tbsp. toasted sesame seeds
Sauce:
1/4 cup fresh orange juice
3 Tbsp. soy sauce
2 Tbsp. rice vinegar
2 Tbsp. light brown sugar
1 Tbsp. Asian sesame oil
2 tsp. cornstarch
1 tsp. Asian chili sauce
1/2 tsp. grated orange zest
1/2 cup chopped fresh cilantro
Directions:
1. Trim chicken and cut into strips 2 inches x 1/2 x 1/2 inch. Whisk egg white, Sherry and cornstarch in a medium bowl. Add chicken strips and toss to coat well. Let stand at room temperature for 30 minutes or refrigerate for 1 hour. (Can do this step up to a day ahead.)
2. Bring 3 quarts of water to a boil. Add a pinch of salt and the chicken strips, stirring to separate. Cook for 30 to 60 seconds. Drain and set chicken aside. (Can do ahead…chill and stir fry later.)
3. Cook spaghetti in another large pot of boiling salted water until just tender. Drain and toss with 1 Tbsp of the oil. In a small bowl stir together all the sauce ingredients. (Sauce can be made ahead.)
4. Heat the remaining 2 Tbsp oil in a wok or large skillet over medium high heat. Add the ginger and garlic and toss for 30 seconds. Add the sauce and bring to a simmer. Toss in the chicken and cook until warmed through, 1 to 2 minutes. Add the noodles to the pan and toss to coat well and warm through, 1 to 2 minutes. Serve immediately.
*You can also add whatever veggies you want….I added sliced red bell pepper and sugar snap peas. Just add the veggies when you put in the ginger and garlic.
Breakfast this morning was the usual. Still not getting old.
We went to my son’s basketball game then to Sammy’s Woodfired Pizza for lunch. My husband and I split the Chicken Hummus Wrap and a Chopped Chicken Salad.
Tonight we have an event to attend and tomorrow we are taking the kids to Disneyland through Monday. Have a great weekend!
