143.8...Pan-Seared Chicken Breasts with Shallots
I have a fabulous chicken recipe for you. Chicken is one of the few things that my husband will eat so I have to get creative with it. I found a simple recipe that is packed with flavor! Pan-Seared Chicken Breasts with Shallots will not disappoint!
Pan-Seared Chicken Breasts with Shallots (Serves 4)
Recipe adapted from All Recipes
Ingredients:
3 Tbsp. unsalted butter, divided use
1 Tbsp. olive oil
4 skinless, boneless chicken breasts (pounded to 1/2” thickness)
Salt and pepper to taste
2 shallots, chopped
2 cloves garlic, minced
1/3 cup dry white wine
1/2 cup chicken broth
Directions:
1. Melt 1 Tbsp. butter and heat olive oil in a large skillet (not nonstick) over medium heat. Season chicken with salt and pepper, and brown on both sides in the skillet, about 2 minutes per side. Remove chicken to a plate.
2. Mix shallots and garlic into skillet and cook until tender. Stir in wine and cook until heated through. Stir in broth and cook for about 5 minutes, or until reduced and slightly thickened. Add chicken breasts and remaining juices to pan and continue cooking until chicken is cooked all the way through, about 3-5 more minutes. Mix in the remaining butter until melted. Serve the sauce over the chicken.
The chicken went perfectly with my Sautéed Zucchini with Orzo!
Wednesday night we went to Poseidon after my son’s basketball game. Besides the gorgeous view of the ocean, my dinner was pretty spectacular as well! Faroe Islands Scottish Salmon (pan seared, pistachio crust, sautéed spinach, citrus-pomegranate beurre blanc and asparagus instead of mashed potatoes):

I went to Sculpt class at the gym followed by grocery shopping. I picked up some sushi for lunch.
We enjoyed the Pan-Seared Chicken Breasts with Shallots last night for dinner.
This morning’s breakfast was the usual but with an added bonus.
I added a slice of prosciutto to my poached egg, avocado and English muffin. I wish I hadn’t because now it will never taste the same without it! So delicious!
I was proud of myself this morning…I went to Zumba class this morning even though everyone, including my husband, was at home relaxing on the couch. I just knew that there was a lot of fabulous eats coming my way this weekend and a trip to the gym would help a little.
We all went to lunch at Miguel’s. I had grilled fish tacos.
Afterwards, we went bowling. I love to bowl! I’m not that good but it’s so fun. Tonight we are taking the kids to the fair and tomorrow I have a ton of cooking to do. We are going to Alicia’s for the 4th and having Kate and John over on Sunday for a barbecue.
