144.2...Caesar Coleslaw with Tangy Caper Dressing
To go along with my Caesar Chicken Burgers that I served this past weekend, I made Caesar Coleslaw with Tangy Caper Dressing. It went perfectly with the burgers and was a nice change of pace from regular coleslaw.
Caesar Coleslaw with Tangy Caper Dressing (Serves 4 to 6)
Recipe from Phillis Carey
Ingredients:
1 cup mayonnaise
1/4 cup sour cream
1/4 cup fresh lemon juice
1 Tbsp. Worcestershire sauce
1 Tbsp. minced rinsed capers
2 large cloves garlic, minced
1-16 oz. bag coleslaw mix
6 green onions, sliced
1/2 cup coarsely grated Parmesan
Salt and pepper to taste
Directions:
1. In a large bowl, whisk mayonnaise, sour cream, lemon juice, Worcestershire sauce, capers and garlic until smooth. Remove 1/2 cup for Caesar Chicken Burgers (if making, otherwise you may have a bit too much dressing).
2. Add the cabbage and green onions to remaining dressing and mix well. Cover and refrigerate until chilled, at least 1 hour and up to 4 hours. Just before serving toss in Parmesan cheese and season to taste with salt and pepper.
After my son’s basketball game last night, we went to Mia Francesca for dinner. I ordered the Chicken Piccata.
The sauce was a bit salty but good otherwise. I loved the giant pile of spinach they served with it!
Breakfast this morning was the usual.
I took my daughter to camp then came home. I took my son to a haircut then to La Salsa for lunch. I had the shrimp burrito.
Eh. Average.
Tonight we are going to the One Direction concert!! I got my earplugs ready to block out all the screaming girls. ;)
