144.6...Caesar Chicken Burgers
The main dish at my 4th of July barbecue was Caesar Chicken Burgers. Not your typical burger at all….but something to change it up and make your tastebuds very happy!
Caesar Chicken Burgers (Serves 4)
Recipe from Phillis Carey
Ingredients:
1 1/2 lbs. ground chicken
1/2 cup Caesar Dressing (from recipe below), divided use
1 egg, beaten
1/4 cup minced shallots
2 Tbsp. chopped fresh basil plus 8 large leaves, divided use
1/2 cup crushed Caesar croutons
6 Tbsp. freshly grated Parmesan cheese, divided use
1 medium red onion, thinly sliced
1/4 cup grapeseed or vegetable oil
4 large sourdough or ciabatta rolls, cut in half
Caesar Dressing:
1 cup mayonnaise
1/4 cup sour cream
1/4 cup fresh lemon juice
1 Tbsp. Worcestershire sauce
1 Tbsp. minced rinsed capers
2 large garlic cloves, minced
Directions:
1. For dressing, mix mayonnaise, sour cream, lemon juice, Worcestershire sauce, capers and garlic until smooth. Remove 1/2 cup for burgers. (You can use rest of dressing on a bag of cole slaw mix to make Caesar Coleslaw).
2. In a large bowl combine the chicken, 2 Tbsp. Caesar dressing, egg, shallots, basil, crouton crumbs and 4 Tbsp. Parmesan. Mix lightly and shape into 4 patties about 1/2 inch thick, pressing a dimple in the center of each. Chill patties for a bit if possible.
3. Preheat grill or grill pan. Brush grill with some oil and brush burgers lightly with oil. Toss onions with remaining oil. Grill burgers for 6 to 8 minutes per side or until cooked through. Grill onions about 8 minutes or until tender.
4. Toast buns. Combine remaining 6 Tbsp. dressing with remaining 2 Tbsp. Parmesan and spread on bottom buns. Top with burgers, grilled onions, basil and top.
Last night we hosted my husband’s poker group. I decided to make a “ Taco Tuesday” night. The evening started off with a spread of different dips and salsas.

I kept dessert in line with the theme by making Mexican Chocolate Streusel Brownie Torte with Cinnamon Ice Cream (recipe coming):

After I took my daughter to camp, I went to get my tire replaced (long story….drove through a giant pile of giant tacks yesterday!), then to an appointment.
I met Alicia for lunch at Sushiya. My meal started with miso soup:
Followed by a variety of excellent-ness:
Sushi fix for the week: complete!
