144.6...Tikka Masala

We are giant spicy food lovers at my house. We love to put hot sauce on everything. Every now and then a dish comes around that is spicy enough for my liking and doesn’t require the extra heat. Last night I made one of those dishes. It came from another food blogger who also likes it spicy so I knew I wasn’t going to be disappointed. And it was Indian food to boot! Two favorites in one!  You can definitely tone down the spice in the recipe to your liking. My husband still put hot sauce on his. :)

Tikka Masala  (Serves 6)

Recipe adapted from My Bizzy Kitchen

Ingredients:

Marinade for chicken:

1.8 pounds boneless skinless chicken breasts, cut into bite size pieces

1 6oz. container plain Greek yogurt

1 Tbsp. lemon juice

2 tsp. ground cumin

1 tsp. ground cinnamon

2 tsp. cayenne pepper

1 tsp. black pepper

1 Tbsp. grated fresh ginger

2 tsp. salt

Sauce:

1 Tbsp. butter

1 cup diced onions

1 jalapeno pepper, chopped (seeds and membrane removed)

1 garlic clove, minced

2 tsp. ground cumin

2 tsp. paprika

1 tsp salt

1/4 tsp. curry powder 

1/4 tsp. Sriracha sauce

6 dried chiles

8 oz. tomato sauce

1 cup heavy cream

Directions:

1. Mix the chicken with the marinade and let it sit for an hour in the refrigerator. 

2. Melt butter in a sauté pan. Add onions, jalapeño and garlic and cook until onions start to become translucent. Add seasonings and stir for 2 minutes until fragrant. Add chicken. Cook for about 4-5 minutes.

3. Add chiles, tomato sauce and heavy cream. Cook for an additional 10 minutes or until chicken is cooked all the way through. Be careful not to boil the sauce.

Monday night my husband and I went out to Samurai to celebrate our belated wedding anniversary.  Our meal started with the standard miso soup and salad.

I have a recipe somewhere for this type of ginger dressing. It is SO good! Why don’t I make this at home!?!

I ordered the NY steak with fried rice.

We need to go to Samurai more often. I forgot how much I enjoy this meal.

Breakfast yesterday was the usual.

I went to Cardio Strength class, an appointment, then home for lunch. Turkey and avocado sandwich with a side salad. Very satisfying.

I went to a new class (for me) at the gym: Ultimate Burn. It was a tabata style workout and it kicked my butt. I left drenched in sweat. A blog reader from out of town was in my class and recognized me. It’s always funny when that happens! 

Lunch was so good yesterday it was repeated today.

Tonight is my son’s basketball game. It’s kind of late so I think we will go out to dinner. Not sure where we are going yet…it’s hard for all of us to agree on a restaurant. I usually lose. 

Does everyone in your family tend to agree on what restaurant to go to?

    I'm sore too...but I knew I would be!
    Samurai is basically like Benihana if you like that type of food. :)
