144.2...Sweet Restaurant Slaw
We are big coleslaw fans. I have to admit when I first saw this recipe and the word “sweet” in it, I was apprehensive. Unless it’s dessert, I don’t like sweet foods. I reduced the amount of sugar in the original recipe and made a few other changes and ended up with a fabulous coleslaw!
Sweet Restaurant Slaw (Serves 4)
Recipe adapted from All Recipes
Ingredients:
1 (16 oz.) bag cole slaw mix
4 Tbsp. diced onions
2/3 cup mayonnaise
1 Tbsp. vegetable oil
1/4 cup white sugar
3 Tbsp. white vinegar
1/4 tsp. salt
1/2 tsp. celery seeds
Directions:
1. Combine coleslaw mix and onion in a large bowl.
2. Whisk together the mayonnaise, vegetable oil, sugar, vinegar, salt, and celery seeds in a medium bowl; blend throughly. Pour dressing mixture over coleslaw mix and toss to coat. Chill at least 2 hours before serving.
Last night’s dinner was Lemon Chicken Piccata, rice and green bean leftovers.
Breakfast this morning:
After I took the kids to school I went to spin class.
Lunch was a Greek Salad with Chicken Kabob at Luna Grill.
I think I need to have this salad at least once a week. That and sushi!
We are off to Back to School Night at the school tonight!
