144.6...Italian Cooking at Home
In between my son’s flag football practice and basketball tryouts, we went to Mia Francesca for dinner. I have mentioned in the past that I’m pretty tired of Mia Francesca but my kids adore it. And they eat ALL their food. This is huge. So I deal with it. They always have this chicken dish on the menu: Pollo Arrosto all Romano (roasted half chicken with garlic, shallots, rosemary, lemon and olive oil). I decided to give it a try.
I substituted mixed grilled vegetables for potatoes. It was excellent. It probably didn’t hurt that there was a ton of fabulous gravy on the plate. :)
My breakfast this morning was the usual but with a small change.
I used wheat toast instead of an English muffin. Lol.
I took the kids to school, then went to Sculpt class. I never look forward to that class but always feel thankful that I did it.
Next up was a cooking class at the San Diego Boys & Girls Club with Phillis Carey. The title of the class was Italian Cooking at Home.
The first recipe was Oven-Fried Parmesan Crusted Butterflied Chicken Breasts Stuffed with Prosciutto, Basil, Sun-Dried Tomatoes and Fontina Cheese:
Delicious! Topping was crispy and the chicken was tender. You can’t go wrong stuffing anything with cheese.
The next recipe was Risotto with Saffron, Quattro Formaggi and Grilled Pesto Shrimp:
AMAZING. I want a big bowl of this STAT. I’m going to have to make this at home very soon!
The third recipe was Sirloin Steak Pizzaola with Sausage and Mushroom Tomato Sauce:
Another good one. Loved this sauce. It would be awesome with chicken too!
Dessert was Tiramisu with Canoli Filling, Chocolate Chips, Cherries and Pistachio Nuts:
Great combination of tiramisu and a canoli!!!
Another winning cooking class from Phillis Carey!
Which would you rather have: Tiramisu or Canoli? Tough one but I’d pick tiramisu!

Wow, everything looks great in that class - but I'd pass on both tiramisu and canoli - just give me biscotti with coffee for dessert and I would be a happy gal. :D
