146.6...Birthday Cake Bars
For the barbecue we hosted on Tuesday, I made Birthday Cake Bars. It’s basically what happens when a sugar cookie bar and funfetti cake get married and have a baby. Pure sweet goodness. I really do like bar recipes because you just pour everything into a pan and bake it. Much easier than cookies!
Birthday Cake Bars
Recipe from Food Network
Ingredients:
2 sticks unsalted butter
1 1/2 cups sugar
3 eggs
1 Tbsp. vanilla
2 cups all-purpose flour
1/4 tsp. salt
1/2 cup, plus more for sprinkling, rainbow sprinkles
Vanilla frosting
Directions:
1. Line a 9x13-inch baking dish with foil, leaving a 2-inch overhang on two sides; coat the foil with cooking spray. Preheat the oven to 350 degrees.
2. Melt butter in a saucepan; let cool slightly. Whisk in sugar, eggs and vanilla. Stir in flour and salt. Fold in 1/2 cup rainbow sprinkles.
3. Bake until the edges are set but the center is soft, about 25 minutes. Transfer to a rack and let cool completely in the pan.
4. Spread vanilla frosting over the cooled bars; top with more sprinkles.
My son had flag football practice last night so by the time we got home it was late. My husband wasn’t home so I just put some leftover Creamy Cole Slaw and Mexican Bean Salad in a bowl and called it a day.
Breakfast this morning:
I took the kids to school and went to Sculpt class. I ran errands, stopping at Luna Grill for my favorite Greek Salad.
Tonight we will be chilling at home watching the first regular season football game! Yes!

OMG I want to face plant into those birthday cake bars! We are rooting for the Cardinals and I'm from MN so I will always be a Viking fan too!
