143.6...Sloppy Joes
My family was super fired up over Thursday night's dinner. What did I make, you ask? Sloppy Joes! Sometimes it’s the simplest things, right!?! I grew up eating Sloppy Joes and pretty sure the Sloppy Joe sauce came out of a can. There’s nothing wrong with that but I think I’ve found a recipe that will make you throw that can or mix packet right in the trash!
Sloppy Joes (Serves 4-6)
Ingredients:
1 Tbsp olive oil
1 medium onion, diced
3 cloves garlic, minced
1/2 green bell pepper, diced
1 pound lean ground beef
2 tsp. prepared yellow mustard
3/4 cup ketchup
1 tsp. Worcestershire sauce
1 Tbsp brown sugar
Salt & freshly ground black pepper to taste
Directions:
1. In a skillet over medium heat, sauté the onions in olive oil until softened, about 5 minutes. Add the garlic and ground beef and brown. Drain off any fat. Toss in bell pepper and cook for about 3 minutes or until softened a bit.
2. Stir in mustard, ketchup, Worcestershire sauce, and brown sugar; mix throughly. Reduce heat and simmer for 30 minutes. Season with salt and pepper to taste.
I served the Sloppy Joes with regular & sweet potato fries as well as a Southwest style salad mix that I picked up at Target. Easy!
Breakfast yesterday morning:
After I took the kids to school, I had some extra time before Zumba so I enjoyed a skinny vanilla latte at Starbucks.
I met Dina for lunch at Lobster West in Encinitas. We were really excited to give it a try!!
I ordered the Maine Style Lobster Roll (chilled lobster, with a touch of mayo, brush of lemon butter and a sprinkle of their spice blend). It was served with their house-made cole slaw and potato chips.
Fabulous!!! Spot-on!! I’m excited about this place! Dina also tried the Crab Roll and really liked it!
Look! I have claws for hands! Lol
Both kids had cotillion last night. In between each one, we had an hour to kill so we went to the Rancho Santa Fe Bistro for dinner. I ordered the Grilled Salmon (grilled fresh salmon, served with a lemon caper sauce and Basmati rice):
The salmon was a bit overcooked for my liking but I’d definitely give the restaurant another shot.
Breakfast this morning:
We went to my son’s basketball game then Mia Francesca for lunch. I had the Insalata di Salmone (roasted salmon with onions, cucumbers, arugula and whipped goat cheese):
It was delicious! I could have licked the bowl.

What do you put on your Sloppy Joes? Sometimes I eat them plain but pickle chips and cheddar cheese is good on them too! Alicia taught me that trick.

I actually add yellow mustard to my sloppy joe's for an acidity kick - so good! But now I really want a lobster roll!
