143.6...Mexican Rice
To go with the Salsa Chicken I made the other night, I cooked up some seriously delicious Mexican Rice. It’s another easy recipe that you need to make right away! One of my blog readers sent me this recipe and I’m forever grateful!
Mexican Rice (Serves 4)
Ingredients:
2 Tbsp. olive oil
1/2 small onion, diced
1 cup jasmine rice
1 can Rotel, undrained (spicy or regular…I went with spicy)
1/2 can tomato sauce
1 1/2 cups water
2 cloves garlic, minced
2 tsp. cumin
1/2 tsp. garlic salt (more or less to taste)
salt & freshly ground black pepper, to taste
Directions:
1. Heat oil in a pot over medium-high heat. Add onions and cook until softened, about 3 minutes. Add the rice and cook until rice is glistening and just starting to brown, about 2 minutes.
2. Add Rotel, tomato sauce and water and stir to combine. Add garlic and seasonings, then bring to a boil for about 2 minutes. Reduce heat to low and cover. Let simmer until liquid is gone, about 20 minutes.
3. Once liquid is cooked out and rice has set for a few minutes, fluff rice with a fork and mix in the sauce that has settled on top. Serve.
I was home for lunch yesterday so I went boring style with a turkey sandwich, veggies and ranch dressing.
I picked the kids up from school and took them to cotillion. In between each one, we went to The Rancho Santa Fe Bistro for dinner. I had the Chicken Piccata:
While it was better than the salmon I had last time, it was still just mediocre.
This morning my son went to flag football practice. I got a bunch of stuff down around the house while sipping on some coffee. I finally decided to eat breakfast and realized it was almost 10AM. I knew we needed to eat lunch before going to my son’s basketball game a bit later so I held off until lunch.

Today has been pretty productive. I made five pie crusts for Thanksgiving that are now in my freezer. Got all the laundry done and managed to buy some holiday gifts online. Not too shabby!
