145.4...Will Drive for Chilaquiles
Saturday was pretty chill at my house. My daughter was at a sleepover and my son was at a birthday party. My husband picked up Sammy’s Woodfired Pizza for dinner. We had the Chopped Chicken Salad and Burrata Pesto Pizza. Both are favorites there!
We watched the USC football game (they won!) and went to bed.
Breakfast Sunday morning:

We went to my niece’s birthday party for a couple of hours. Later on, we decided to have a late lunch at Round Table Pizza. It’s my son’s favorite pizza so he was quite happy. We all had the lunch buffet.
The salad wasn’t very good so I just stuck with the pizza.
We hung out at home for the rest of the day watching football. We went to Casa de Bandini for dinner. My husband and I shared some guacamole to go with our chips.
I ordered the Enchiladas Huastecas (one chicken enchilada with salsa verde and one beef enchilada with salsa roja, topped with sour cream):
I normally like the food there but it was very bland this time. I was able to perk it up with a bunch of hot sauce though. After dinner, we took the kids to see the Peanuts movie. It was very cute.
And then, all of a sudden, it was Monday morning again. I had a breakfast planned with some friends but I get up so early that I can’t wait that long to eat. I ate a small bowl of Frosted Mini Wheats before dropping the kids off at school.
I drove the thirty minutes or so to Chula Vista to have breakfast at Talavera Azul with some friends from the school. They have been raving about their chilaquiles and I was more than excited to try them. They did not disappoint!
I chose the “Divorced Chilaquiles” where you have the option of choosing two sauces instead of one. I decided on the salsa verde and the chipotle cream sauces.
With eggs over easy, it was phenomenal. It may not look like much on the plate but it definitely was the best chilaquiles I’ve ever had!
The Mexican food celebration continued later in the day at Chargers game. We went to a tailgate hosted by my husband’s company. We enjoyed yummy chips, salsa and guacamole.
And I ate two of these fabulous carne asada tacos:
My contribution to the tail gate were Birthday Cake Bars which disappeared pretty fast.
The food was definitely the high point of the evening. The Chargers lost (again) to the Bears in the 4th quarter. I should be used to them losing by now but it stings every time.
Breakfast this morning:
After the school drop-off, I went to Cardio Strength class at the gym. I definitely needed the workout!
I went to a cooking class at the La Jolla Community Center taught by Phillis Carey. The class was “Italian-Inspired” Fish.
The first recipe was Baked Scampi with Zucchini and Red Peppers on Lemony Garlic Linguine:
Easy, simple and delicious.
The second recipe was Baked Fish Fillets with a Garlic Lemon Basil Crust:
Yum!! Loved the topping on this! Would be great on chicken too….
Next up was Baked Fish Topped with Garlic Spinach & Tomatoes:
This one was probably my favorite. I loved all the flavors!
The last fish recipe was Broiled Salmon with Balsamic Glaze:
Since I’m such a salmon lover, I’m sure you will see me make this soon. I really enjoyed it!
Dessert was Nutella Chocolate Brownies:
Yep. Going to make this one soon too! Loved it!
I’m off to pick up the kids from school soon. My son has a flag football game tonight at 8:00. Don’t they know I’m asleep by 9PM every night!?!

I usually go to bed at midnight! But I don't have to wake up until 7, even on a weekday, so that's enough sleep for me :D
