141.8...Oven Roasted Broccoli
To go with my Potato Latkes and Oven Fried Dijon Chicken Breasts, I made Oven-Roasted Broccoli on Friday night. You can’t go wrong by roasting vegetables. It’s amazing how flavorful they become!
Oven Roasted Broccoli (Serves 4)
Recipe from Alton Brown
Ingredients:
1 pound broccoli, rinsed and trimmed
2 Tbsp olive oil
2 cloves garlic, minced
1/2 tsp. kosher salt
1/4 tsp. freshly ground black pepper
1/3 cup panko bread crumbs
1/4 cup finely grated Parmesan or sharp Cheddar
Directions:
1. Preheat oven to 425 degrees.
2. Cut the broccoli florets into bite size pieces. Cut the stalk into 1/8-inch thick round slices. Place the broccoli into a mixing bowl and toss with the olive oil, garlic, kosher salt and pepper and set aside.
3. Spread the panko into a 9x13-inch metal cake pan and place into the oven for 2 minutes or until lightly toasted. Remove the panko from the oven and add to the bowl with the broccoli mixture. Toss to combine. Return the mixture to the cake pan, place in the oven and roast just until the broccoli is tender, 8 to 10 minutes. Remove from oven, toss in the cheese and serve immediately.
Saturday night I attended my husband’s company’s holiday part at the Hilton Torrey Pines.
Besides hanging with my husband, I had a blast with my friends Alicia and Kate.
We enjoyed a buffet dinner. I had a bit of everything, of course!
I burned off every calorie on my plate on the dance floor. We spent the night at the hotel and by the time I woke up Sunday morning, I was starving. I darted downstairs for the breakfast buffet.

Breakfast was so filling that I skipped lunch. That’s ok, I was really trying to save room for dinner. Alicia invited us over for hot wings. It wasn’t just any “hot wing” night, it was to celebrate my upcoming birthday on Wednesday! I love my birthday!

I brought over a salad (store bought BBQ Ranch salad mix):
To top it off, Alicia got me a red velvet birthday cake from Nothing Bundt Cakes.
I cannot tell you how much I love their cakes! Let’s be honest though, their cakes are good but it’s the frosting that makes them outstanding!
Today’s breakfast:
After I took the kids to school, I went to Hardline class at the gym.
Lunch was a turkey sandwich and the rest of the salad from last night.
Tonight is a chill night at home but the rest of the week is crazy!!
