143.8...Chantal's New York Cheesecake
Every Thanksgiving I make the same cheesecake. It’s so heavenly and rich. The recipe states that if you follow it exactly, it will not crack. Mine always does. I don’t care. Throw some whipped cream on top of it and no one will know. This one tastes too good not to.
Chantal’s New York Cheesecake (Serves 12)
Recipe from All Recipes
Ingredients:
15 full graham cracker sheets, crushed
2 Tbsp butter, melted
4 (8 ounce) packages cream cheese
1 1/2 cups white sugar
3/4 cup milk
4 eggs
1 cup sour cream
1 Tbsp vanilla extract
1/4 cup all-purpose flour
Directions:
1. Preheat oven to 350 degrees. Grease a 9 inch springform pan.
2. In a medium bowl, mix graham cracker crumbs with melted butter. Press onto bottom of springform pan.
3. In a large bowl, mix cream cheese with sugar until smooth. Blend in milk, and then mix in the eggs one at a time, mixing just enough to incorporate. Mix in sour cream, vanilla and flour until smooth. Pour filling into prepared crust.
4. Bake in preheated oven for 1 hour. Turn the oven off, and let cake cool in oven with the door closed for 5 to 6 hours; this prevents cracking. Chill in refrigerator until serving.
Friday night we went to Firenze for dinner. My husband and I split the Chopped Caesar:
I ordered the Calamari Marinara.
I used to order this all the time. This time the calamari was overcooked. :( But the pasta tasted great!
Saturday’s breakfast:
Then it was off to Solid Rock Gym for rock climbing for my daughter’s birthday party. She had a blast! Those kids rock climbed for two straight hours. I was exhausted watching them. I fueled myself back up with a slice of pizza and a small piece of birthday cake.
My family came back to my house and I put out some cheese and crackers and some chips and dips.
We went to dinner at our club. I ordered the chicken piccata. It was heavenly.
Sunday’s breakfast was a bit different! I made a fried egg sandwich with cheddar cheese in place of my normal poached egg.
We chilled at home all day Sunday. I did laundry, caught up on email and cleaned up from the party. Lunch was a tuna sandwich, veggies and ranch dressing.
I had to have some cake afterwards.
My daughter had a party to go to at Corvette Diner for dinner so we took my son to Mona Lisa in Little Italy for dinner. My meal started off with a dinner salad with Italian dressing.
I ordered the chicken piccata. I can’t help it. I’m obsessed.
It came with a side of pasta. There was enough food there for two people.
We had some time to kill, so we asked our server where the best gelato in Little Italy was and he sent us to Pappalecco. His recommendation was right on the money. The gelato was FABULOUS!
I had half Nutella and half stracciatella. Delicious!!
Today’s breakfast:
I took the kids to school, then went to Hardline class at the gym. We had a sub today and he did not mess around. Tough class!
Afterwards, I ran some errands. Lunch was a turkey sandwich, veggies and ranch at home.
Tonight my son has basketball practice so it looks like there will be leftovers for dinner in my future….
Do you have a fabulous recipe for cheesecake that DOES NOT crack!?!
