145.2...Effortless Entrees
I ate lunch at my desk yesterday. I do that sometimes and enjoy it because I feel like I’m getting two things done at once: eating and cleaning up my inbox. I feel more productive. If I could do ten things at once, I would. Lol.
I had tuna salad, veggies and ranch dressing.
Last night my son had basketball practice so while I waited, I went to Sammy’s Woodfired Pizza for dinner. I had the Chopped Chicken Salad, one of my favorite salads of all time.
Today’s breakfast:
After I took the kids to school, I went to Cardio Strength class at the gym. Always a fabulous workout.
Next up was Phillis Carey’s cooking class at the La Jolla Community Center. Todays’ class was “Effortless Entrees”, simple and easy recipes to prepare. I’m all about that for crazy weeknights!
The first recipe was Hoisin Orange Glazed Broiled Salmon with Sesame Soy Potato Mash:
The salmon was incredible. I’m always looking for new, easy salmon recipes so I’ll be making this one soon. The potatoes were good too! Unique…you put a mixture of sesame oil, rice vinegar and soy sauce on them. Sounds crazy but it was delicious!
Next was Goat Cheese Stuffed Chicken Breasts with Tangerine Juice Au Jus:
Of course the chicken was good…it was stuffed with goat cheese! But what surprised me was the sauce. I’m normally not a fan of fruit with my food. But I actually liked the sauce the chicken! Go figure!
The third recipe was Shrimp and Corn Chowder with Bacon and Fresh Herbs:
Yum! Loved this one! The shrimp was so good in it.
Italian Pork Tenderloin with Prosciutto, Mushrooms and Tomato Basil Sauce:
Fresh, light and tasty! Really liked the sauce. May try it soon on chicken as my husband doesn’t eat pork.
Dessert was Homemade Double-Chocolate Pudding with Whipped Cream and Chocolate Shavings:
Epic. Best chocolate pudding ever. Nuff said.
I love cooking class. There’s something so relaxing about it, I could sit there for hours.
