145.4...Chewy Chocolate Chip Heath Bar Cookies
It’s been raining all day. The perfect day to bake cookies! I went through a bunch of cookie recipes and finally settled on Chewy Chocolate Chip Heath Bar Cookies. It was a great choice. They are the perfect cookies for a rainy day…or any day for that matter.
Chewy Chocolate Chip Heath Bar Cookies (Makes about 30 cookies)
Ingredients:
2 cups all-purpose flour
1/2 tsp. baking soda
1/2 tsp. salt
3/4 cup unsalted butter, melted
1 cup packed brown sugar
1/2 cup white sugar
1 Tbsp vanilla extract
1 egg
1 egg yolk
1 cup Toffee Heath Bar bits
1 1/2 cups semisweet chocolate chips
Directions:
1. Preheat the oven to 325 degrees. Grease cookie sheets or line with parchment paper.
2. Sift together the flour, baking soda and salt; set aside. In a medium bowl, cream together the melted butter, brown sugar and white sugar until well blended.
3. Beat in the vanilla, egg, egg yolk until light and creamy. Mix in the sifted ingredients until just blended.
4. Stir in the chocolate chips and Heath bar bits by hand using a wooden spoon. Drop cookie dough with a cookie scoop onto the prepared cookie sheets.
5. Bake larger cookies for 11 to 13 minutes, or until the edges are lightly toasted. Cool on baking sheets for a few minutes before transferring to wire racks to cool completely.
Before my son’s basketball game on Wednesday night, we went to dinner at Tio Leo’s. I ordered the Camarones Rancheros with beans and rice.
It was excellent. I really enjoyed it!
Breakfast Thursday:
I went to Sculpt class at the gym, then to Fashion Valley Mall to run some errands. I met some friends for lunch at True Food Kitchen. I ordered the Mediterranean Chopped Salad (cucumber, cherry tomato, watercress, pole bean, quinoa, feta, almond & lemon oregano vinaigrette):
Healthy and good. :)
Dinner that night was Souperior Meatloaf, wild rice and salad.
I went to an event at the school and then came home and went to bed.
Breakfast Friday:
After I took the kids to school I went to Zumba. Lunch was with some friends at Love Boat Sushi (formally Big Bang).
Miso soup:
Tuna, yellowtail, salmon sushi. Marine Boy & Hot Night Rolls:
I went to the school for an event when I was called by the school nurse. My son had tripped and fallen over a short concrete wall, right on his face and knocked out most of his two front teeth! Needless to say, we spent the next few hours at the dentist getting them fixed. When it was done, his new teeth looked even better than the old ones! Lol. Poor little guy!
We came home and I attempted to make a pasta sauce that my kids loved when we went to Naples, Florida for last year’s spring break.
Eh. It was boring and didn’t turn out right. It probably needed to cook a lot longer but we were all hungry and couldn’t wait any longer. Oh well, you win some and you lose some. At least the salad was good:
Saturday’s breakfast:
I did laundry and got some stuff done around the house. Lunch was a turkey sandwich, veggies and ranch dressing:
My daughter went to a birthday party and my son went to a friend’s house. My husband and I went to Ruth’s Chris for dinner. My fabulous meal started with Seared Ahi Tuna:
For my entree, I ordered the Lamb Chops:
We shared Potatoes Au Gratin (actually my husband ate them all) and corn:
Dessert was Cheesecake. Their cheesecake is unreal.
Today’s breakfast:
I went to get groceries and pick up Chipotle for lunch. I had a chicken bowl with brown rice, pinto beans, salsa, lettuce and guacamole:
Tonight Alicia and her family are coming over for dinner. I’m going to try a new recipe on them. Wish me luck!
