146.6...Sweet and Sour Chicken

I whipped up a super quick and delicious dinner on Friday night. The recipe came straight out of the most recent issue of Cooking Light. Give it a try on those nights that you’re busy but still want a healthy, homemade meal.

Sweet and Sour Chicken (Serves 4)

Recipe from: Cooking Light, January/February 2016

Ingredients:

2 large egg whites

4 tsp. cornstarch, divided

1 pound boneless, skinless chicken breasts, cut into 1-inch pieces

6 Tbsp ketchup

1/4 cup water

3 Tbsp cider vinegar

2 Tbsp brown sugar

1 1/2 Tbsp lower-sodium soy sauce

2 Tbsp canola oil

1 red bell pepper, cut into 1-inch pieces

1 1/2 cups fresh pineapple chunks

2 tsp. grated fresh ginger

3 green onions, cut into 1-inch pieces

3/8 tsp. kosher salt

Directions:

1. Combine egg whites and 1 Tbsp cornstarch in a large bowl, stirring with a whisk. Add chicken to bowl; toss to coat. 

2. Combine remaining 1 teaspoon cornstarch, ketchup, and next 4 ingredients (through soy sauce) in a bowl, stirring with a whisk.

3. Heat a large nonstick skillet over medium-high heat. Add 1 Tbsp oil to pan; swirl to coat. Add bell pepper to pan; cook 2 minutes, stirring frequently. Add pineapple, ginger, and onions to pan; cook 2 minutes, stirring occasionally. Transfer bell pepper mixture to a plate. 

4. Add remaining 1 Tbsp oil to pan. Add chicken mixture, allowing any excess egg white mixture to drip back into bowl. Stir-fry 6 minutes or until chicken is browned and done. Add ketchup mixture and bell pepper mixture to pan. Bring to a simmer; simmer 1 minute or until slightly  thickened. Sprinkler with salt; serve immediately.

We packed the car and headed to LA to celebrate my nephew’s 1st birthday. On the way, we stopped at Pizza Rev for lunch.

We arrived at my brother’s house for the party. They had a ton of food, including a taco guy! My favorite!

I had another set of two tacos after these. Had too. Oh, and birthday cake. 

Later that evening, we went to a friend’s poker party. They had a taco guy there too! I downed another two tacos. Taco madness!

We stayed at the Beverly Hilton that night. Sunday morning we had breakfast at their buffet. I had an omelet, hash browns, bacon and sausage.

We went back to my brother’s house. We picked up Mendocino Farms for lunch. I had Mendo’s Chicken Cobb Salad (shaved, roasted free-range chicken breast, butter lettuce & romaine, Prime applewood bacon, avocado, grape tomatoes, red onions, hard boiled egg with mustard vinaigrette):

Dessert was more birthday cake. I love birthday cake.

After lunch, we drove back to San Diego. For dinner, we went to Alicia’s house. She made pasta with homemade meat sauce and salad.

My daughter went to a friends house and my son has a friend over. It’s nice having a three day weekend! Tomorrow…back to reality!
