143.4...Chicken Breasts in Caper-Cream Sauce
It had been awhile since I’ve made a new recipe but it was worth the wait on Thursday night. Chicken Breasts in Caper-Cream Sauce was a huge it in our house! I doubled the sauce in the original recipe and I’m so glad I did. You will thank me!
Chicken Breasts in Caper-Cream Sauce (Serves 4)
Recipe adapted from All Recipes
Ingredients:
4 (6 ounce) boneless, skinless chicken breasts, pounded to 1/2-inch thickness
1 tsp. lemon pepper
1 tsp. salt
1 tsp. dried dill weed
1 tsp. garlic powder
3 Tbsp butter
1 cup whipping cream
2 Tbsp capers, drained and rinsed
Directions:
1. Sprinkle chicken with lemon pepper, salt, dill, and garlic powder.
2. Melt butter in a large skillet (not non-stick) over medium heat. Put chicken in skillet and brown, about 2 minutes per side. Transfer chicken to a plate.
3. Add whipping cream and simmer, whisking constantly, until reduced to sauce consistency, about 3-5 minutes. Stir in capers and return chicken to skillet. Continue cooking until chicken is cooked through. Taste for salt and pepper.
I met some friends for breakfast at Snooze on Thursday morning after I took the kids to school. I ordered an egg white omelet with cheddar cheese, spinach and caramelized onions. On the side: sliced tomatoes and wheat toast. It was fantastic.
I went to an appointment, then the gym for some boring treadmill time since I had missed my Sculpt class.
Since I ate a later breakfast, I wasn’t super hungry for lunch. I found half a bag of trail mix in my pantry so that was lunch.
Dinner really was epic. The Chicken Breasts in Caper-Cream Sauce went perfectly with some frozen rice that I found in the freezer. I also served some carrots with it. Perfect dinner.

After I took the kids to school I went to my dentist appointment, then to the gym for Zumba class.

I picked up the kids from school, got them ready then took them to cotillion. In between each of theirs, we went to Rancho Santa Fe Bistro for dinner. I haven’t had any lunch at this place but came upon a salad I really liked last night:
Quinoa, Chicken & Avocado Salad (mixed spring greens, quinoa, carrots, tomato, avocado, & house vinaigrette). I would order it again!

It’s been a wonderful, lazy morning over here and I’m thoroughly enjoying it! Happy Saturday!
