144.0...Flavors of Italy
Last night it was all about digging around in my freezer for dinner. I came up with Trader Joe’s Four Cheese Ravioli. I had some frozen marinara as well so that became dinner.
I had some lettuce so I made a salad to go with it.
I really need to go grocery shopping.
Breakfast this morning:
After I took the kids to school I went to Cardio Strength class at the gym. Then it was off to a cooking class at the La Jolla Community Center taught by Phillis Carey. The class was titled “Flavors of Italy.” The first recipe was Risotto Primavera with Prosciutto, Asparagus, Leeks and Fresh Peas:
This was so fresh, creamy and delicious! Loved it!
The next recipe was Baked Italian Chicken Rolls with Prosciutto, Fontina and Basil Ricotta Filling:
The chicken rolls were served on top of marinara and with a side of garlic spinach. I loved this too! The chicken was so good!
The third recipe was Shrimp and Spinach Lasagna with Creamy Tomato Sauce:
This sauce was so amazing. It would be great on pasta just by itself.
Dessert was Espresso Panna Cotta with Dark Chocolate Sauce:
Fabulous. It was a little cup of heaven. Another awesome Phillis Carey class!
