143.0...Brie Saute with Green Onions
My annual swap party was last night. Just in case you’re not sure what a swap party is…you bring all your clothes/shoes/accessories that you don’t want or wear anymore and let everyone have at it! No rules….just take what you want. New clothes for free! :)
Besides clothes, I also have everyone bring a heavy appetizer to share. After I had Brie Sauté with Green Onions in cooking class recently, I knew then that that’s what I wanted to make for my party.
Brie Sauté with Green Onions (Serves 4-6)
Recipe from Phillis Carey
Ingredients:
1 (8 ounce) round Brie
1 egg, lightly beaten
1 cup plain dry breadcrumbs
4 Tbsp unsalted butter, divided use
1/2 cup chopped green onion tops
1 small bread baguette, sliced
Directions:
1. Dip the cheese in egg and then coat with breadcrumbs. Repeat on second side. Melt 2 tablespoons butter over medium high heat in a small nonstick skillet. Add the green onions and toss briefly.
2. Add remaining butter to skillet. When foamy, add the breaded cheese. Brown well on both sides, 2 to 3 minutes or until cheese is warm.
3. Place cheese on a serving platter. Pour butter and green onions over top of cheese and serve immediately with bread slices.
I may have overcooked the onions a bit but it was still outstanding!!
For Tuesday’s dinner, I pulled some leftover Ground Beef and Pasta Casserole out of the freezer to reheat. I made a Caesar salad to go with it. Easy!
Breakfast on Wednesday:
I took the kids to school then went to the grocery store to get stuff for my swap party. I grabbed some sushi for lunch.
It was time for the swap party to start! Everyone bought their clothes and we had a great time “shopping”, eating and enjoying some wine.
For dessert I made another cooking class winner: Blueberry Lemon Bars with a Shortbread Crust (recipe coming).
While I was enjoying all the delicious eats, Silvana made out like a bandit!
Today’s breakfast:
I got to sleep in because the kids are officially on spring break! Yes!!
I was able to get some sushi for lunch with Alicia at Love Boat. Miso soup:
