144.2...Garlic Cheese Biscuits
My daughter goes to this cooking class once a week after school and they made some pretty amazing Garlic Cheese Biscuits and fortunately sent her home with the recipe. I made them first thing this morning. The house smelled fabulous. Not a bad way to start your day!
Garlic Cheese Biscuits (Makes about 9)
Ingredients:
2 Tbsp butter, melted
2 cloves garlic, minced
2 Tbsp fresh chopped parsley
2 cups Bisquick
3.5 oz. shredded sharp Cheddar cheese
2/3 cup fat free milk
Directions:
1. Preheat oven to 400 degrees. Line a cookie sheet with parchment paper.
2. Melt butter in a small fry pan, add half the garlic and sauté on low heat about 1 minute. Remove from heat and add parsley.
3. In a large bowl, combine biscuit mix, cheddar cheese, and remaining garlic. Stir in milk and mix (do not over mix).
4. Drop batter by heaping tablespoons (1.5 oz. each) onto prepared cookie sheet. Bake for 10 minutes.
5. Brush or drizzle with melted butter. Bake for 5 more minutes, or until lightly browned on the bottom.
In Palm Desert Wednesday night, I went with my mom to Shogun for dinner.
My meal started with onion soup and salad.
I had the NY Steak which came with veggies, shrimp and fried rice. Nom!
We decided to celebrate my mom’s birthday a bit early. They gave her a special hat to wear. Lol.
Thursday for breakfast I had toast with butter.
For lunch we went to Manhattan in the Desert. I had half a salami sandwich, macaroni salad and a green salad with ranch dressing.
After lunch I headed back to San Diego. I went to my husband’s office for a special happy hour.

Later that night, we finally had my husband’s birthday cake from Baskin Robbins.

After I took the kids to school, I went to Zumba class.

We went to our friends, Karin and Eric’s house for dinner last night. They had quite the delicious spread out when we arrived.
My focus was on the roasted eggplant dip that Karin made. Outstanding!
Fortunately I saved room for dinner!
Brisket, chicken, Brussels sprouts, rice, asparagus and salad. Everything was delicious!
I also loved the homemade hot sauces!!!
While I was in Palm Desert, I picked up some desserts from Manhattan in the Desert to bring to their house.

I had to try them all.
I could not decide which one was my favorite. They were all insanely good.
Today’s breakfast:
This morning was pretty chill around here. We went to lunch at Sammy’s Woodfired Pizza. My husband and I split the Chopped Chicken Salad and the Burrata Pesto Pizza.
Afterwards, we went to my son’s basketball game.
It’s supposed to rain here tonight and I’m looking forward to have a relaxing evening! Have a great weekend!
