144.4...Enchanting Bunco
We took my mom to Burger Night at our club on Sunday night. It wasn’t just any Burger Night, it was called “Burger Bash” and they were grilling the burgers outside to order. The rest of the sides and toppings were served buffet style.
While it was good, I prefer regular burger night better. I was definitely missing my favorite aioli and sweet potato fries!
They did have a fabulous berry cobbler for dessert though!
Monday’s breakfast:
I took the kids to school, then it was off to Hardline class at the gym. We had a substitute and he kicked our butts. I guess I deserved it.
I came home to quickly change and head out the door to chaperone my son’s field trip. I didn’t have time to eat a proper lunch so I ate some trail mix in the car.
This wasn’t just any field trip. We went to see our high school baseball team play against a nearby high school’s team at Petco Park!
You gotta have a hot dog at a baseball game right!?!
Last night was Bunco at Darci’s house.
Everything was SO beautiful. Her backyard looked like an enchanted garden!
The food was delicious and gorgeous to look at it.

Today’s breakfast:
I’m lucky I got out of the door on time. My alarm somehow got turned down and I never heard it go off. I jumped out of bed when I realized I was late and it just isn’t the way I liked to start my day. I felt off all day. I don’t do well when I have to rush.
After I took the kids to school, I went to Cardio Strength class at the gym. I changed and headed to Phillis Carey’s cooking class at the La Jolla Community Center. Today’s class was called “Wine Country Cuisine."
The first recipe was Grilled Asparagus, Strawberry and Melon Salad with Fresh Mozzarella and Crispy Prosciutto:
Now, you know I don’t like fruit with my food but if you eat each bite separately, the fruit really isn’t “with my food” right? In all seriousness, the presentation of this salad was so pretty. I did enjoy it.
The second recipe was Pistachio Crusted Salmon Cakes with Creamy Mustard Dill Sauce:
Outstanding. Loved this!
The third recipe was Chicken Veronique with Red Grapes and Tarragon with Wild Rice Orange Pilaf:
Minus the grapes, I really liked this. The chicken was so tender! The rice was delicious and unique.
Next up was Wine Country Steaks with Red Wine, Mushroom and Mustard Sauce:
Another winner!!
Dessert was Almond and Cherry Torte with Lemon-Scented Sweet Cream:
Enjoyed this too. I always love Phillis’ recipes!!
After class, I went to an event for my son’s class, then to Starbucks for a iced skinny vanilla latte.
I’m hoping it gets me out of this funk I’m in! Here’s to a more calm morning tomorrow!
