144.8....Chicken Piccata Pasta Toss
I whipped up a fabulous new recipe on Thursday night. Chicken Piccata Pasta Toss. As you know, I LOVE anything piccata. Chicken, fish, veal…it’s all good. But pasta piccata!?! Sign me up!!
Chicken Piccata Pasta Toss (Serves 4)
Recipe slightly adapted from Rachael Ray
Ingredients:
2 Tbsp extra-virgin olive oil
1 1/3 pound chicken breast tenders, cut into 1-inch pieces
Salt and pepper
1 1/2 Tbsp unsalted butter
4 cloves garlic, minced
2 shallots, chopped
2 Tbsp all-purpose flour
1/2 cup white wine
1 lemon, juiced
1 cup chicken broth or stock
3 Tbsp capers, drained
1/2 cup flat-leaf parsley, chopped
1 pound penne rigate pasta, cooked to al dente
Chopped or sniped chives, for garnish
Directions:
1. Heat a deep skillet over medium high heat. Add a tablespoon of extra-virgin olive oil and the chicken to the pan. Season chicken with salt and pepper. Brown chicken until lightly golden all over, about 4-5 minutes. Remove chicken from pan and return the skillet to the heat.
2. Reduce heat to medium. Add another tablespoon of extra-virgin olive oil and 1 tablespoon butter, the garlic and shallots to the skillet. Sauté garlic and shallots 3 minutes. Add flour and cook 2 minutes. Whisk in wine and reduce liquid 1 minute. Whisk lemon juice and broth into sauce. Stir in capers and parsley.
3. When the liquid comes to a bubble, add remaining 1/2 tablespoon of butter to the sauce to give it a little shine. Add chicken back to the pan and heat through until fully cooked, about 2-3 minutes.
4. Toss hot pasta with chicken and serve. Adjust salt and pepper, to your taste. Top with fresh snipped chives.
Even though I didn’t have parsley and chives on hand, it was fabulous! Will definitely add those in next time though!
Wednesday night my son was at basketball practice. I took my daughter to Pizza Rev (again!) for dinner. I added pesto and extra garlic to my pizza this time.
Thursday’s breakfast:
After I took the kids to school, I went to Sculpt class at the gym. I ran some errands and stopped at Green Spot Salad Company for lunch.
Ginger Sesame Ahi Bowl. Still love it!
Dinner was the Chicken Piccata Pasta Toss with steamed broccoli.
Friday’s breakfast:
I took the kids to school, then went to spin class.
I met some friends at Puesto in La Jolla for lunch. I had never been and was excited to try it. I had to try their margarita. Normally, they are too sweet for me but this one was pretty perfect.
We all shared the Crab Guacamole which was excellent.
I had three tacos: chicken al pastor, filet mignon and chicken verde:
All were excellent but the filet mignon was my favorite! Great place!!
After I picked up the kids from school, we picked up my son’s friend and went on my son’s annual birthday hike in Torrey Pines and PF Changs for dinner.
My meal started wit egg drop soup:
I split Dan Dan Noodles and Sesame Chicken with my husband.
We ordered chocolate cake for dessert for my son’s birthday.

Yesterday was my son’s 11th birthday. My day started like usual….
We headed to my son’s birthday party where I enjoyed pizza and birthday cake. We went to my son’s basketball game then back to our house for a bit. Next it was off to Petco Park for a Padres game! I ate little bits of this at and that: pizza, chicken wings and a churro. It was basically a junk food day. But it’s ok on your son’s birthday, right!?!
It was a late night. The game went into extra innings and was exciting, especially since the Padres won!
Today’s breakfast:
My son went to a friend’s house the rest of us went to Karl Strauss for lunch. I had a small Gem Salad and Ahi Poke.
Tonight we are taking my mom to Burger Night! Yes!!
