145.4...Stuffed Chicken Breasts
On Sunday I was looking through the freezer to figure out if I had anything to make for dinner Monday night. I saw a container of Sloppy Joes II and knew I had hit the nail on the head.
I had the buns and fries in the freezer too so all I had to do was make a salad!
Breakfast this morning:
After I took the kids to school, I went to Cardio Strength class at the gym. Seriously hard today. My heart rate monitor told me I burned 600 calories but I didn’t need that to tell me….I was a sweaty mess.
Next up was a cooking class at the La Jolla Community Center taught by Phillis Carey. The class was all about Stuffed Chicken Breasts. Phillis always has the most delicious chicken recipes. The cool thing about these recipes is that you are learning the technique really….you can stuff them with anything! Never ending chicken recipes! :)
The first recipe was Greek Oven-Fried Chicken Bundles with Tomato, Red Pepper, Cucumber and Feta Filling:
Crispy and delicious. Love the technique of oven frying….you heat some oil on a pan in the oven and then place the bundles on top of the hot oil to cook. Really tastes fried!
The next plate had two different recipes: Baked Chicken Saltimbocca Rolls with Mushroom Marsala Sauce and Herbed Polenta:
This plate was my favorite. This would make a fabulous meal when you have company over. It was fabulous!
The next recipe was Boursin Cheese and Scallion Pocket Stuffed Chicken Breasts Topped with Port and Balsamic Roasted Strawberries:
I’m torn on this one. The chicken with the boursin cheese in it was yummy of course. I can’t say I was a huge fan of the strawberries but I don’t normally like “fruit with my food”. The sauce from the strawberries was good with it but I pushed the strawberries to the side. It did seem like the people in the class liked it though so I’m sure I’m alone on this.
The last chicken recipe was Florentine Spinach Stuffed Chicken Breasts with Prosciutto and Provolone in a Tangy Tomato Sauce:
Loved this! Great sauce and all the flavors in the chicken were delicious.
Dessert was Almond and Cherry Torte with Lemon-Scented Sweet Cream:
Amazing! Really enjoyed this. Phillis seems to always outdo herself.
Now I’m hanging at Starbucks enjoying a green tea before picking up the kiddos from school. Tonight, I’m attending my first book club ever!
