146.4...All I Have (Take Notes, Beyonce!)
What a whirlwind the last few days have been! On Tuesday I went to lunch at Sushi on the Rock. My delicious meal started with miso soup:
Yellowtail, salmon and tuna nigiri:
Sunkist Roll (shrimp tempura, spicy krab, cucumber and avocado, layered with salmon…green onion and spicy ponzu sauce):
Spectacular. Everything was super delicious! I haven’t really enjoyed my last couple of experiences there but I decided to give it another try. I’m glad I did!
For dinner, my husband picked up a Chopped Chicken Salad from Sammy’s Woodfired Pizza after picking up my son from basketball practice. I enjoyed the salad with the rest of the Blackened Chicken Breasts with Cajun Tartar Sauce.
Wednesday’s breakfast:
I dropped the kids off at school, then headed to the airport to meet Alicia. We were off to Las Vegas for the Jennifer Lopez concert. We enjoyed some pre-flight libations:
We arrived, checked into the Planet Hollywood and headed to Holstein’s for lunch. We both ordered the El Caliente Burger (beef patty topped with pepper jack cheese, pickled jalapeño, avocado, pork chicharrones & tequila-cilantro mayo). We split fries and onion rings.
Yum! Not as good as the El Machete Burger that they took off the menu though.
We shopped the rest of the day until it was finally time to get ready for dinner and the concert. We had dinner at Koi in Planet Hollywood. We shared a ton of fabulous dishes.

Salmon Sashimi & Hamachi Roll (yellowtail & cucumber, cilantro topped with jalapeño and yuzu sauce):
Glenn Roll (spicy tuna topped with spicy albacore, jalapeño, crispy onions and spinach chips):
Everything was insanely good. We really loved it!
Things got even better at Jennifer Lopez’s “All I Have” concert. We walked in and were immediately greeted with her iconic Versace dress.
I was blown away to see it in person. There were several other dresses and costumes of hers there as well. What a treat!
Our friends Cathi and Larry were going to the concert too so we were able to snag a photo with them before heading into the concert.
While our seats were good, Cathi’s were a bit better and she got some really amazing photos that she shared with me:
The show was unreal. She killed it. It was two hours of all her hits, fabulous costumes and amazing lighting and effects. I kept thinking, “now that’s how you do it, Beyonce! Take notes!.” I would watch J. Lo’s concert again in a heartbeat!
Thursday morning, I grabbed a latte and egg sandwich at Starbucks before heading to the airport.
For the plane, we got Jersey Mike’s. I had an Italian sub with jalapeño chips.
Quite possibly one of the best meals ever. :)
That night we took the kids to the Padres game. I had some pretty epic trip-tip nachos.
There was also some equally epic wine and a chocolate chip cookie.
We left the game with the Padres beating the Mariners 16-2. The Padres ended up losing 16-13! Crazy!
Yesterday’s breakfast:
I took the kids to school, then it was off to Morada at The Rancho Santa Fe Inn to celebrate Dina’s birthday. My breakfast #2/lunch was their Egg White Frittata:
It was fun catching up with all the ladies!

I picked up the kids from school, then we headed to my son’s basketball game later. Dinner was Pizza Rev.

My daughter and I took our new pup, Wally, to his last puppy class. The rest of the weekend is pretty low-key. Looking forward to it!
