147.8...Seven Layer Taco Dip
Boy, am I behind in posting! I had a crazy weekend of non-stop baseball and food action!! We had most of our family in town to attend all the MLB All Star Game events. I hosted a barbecue at my house on Monday. We had so many yummy things including this Seven Layer Taco Dip. There was not a spec of it left.
Seven Layer Taco Dip
Recipe adapted from All Recipes
Ingredients:
1 (1 ounce) package taco seasoning mix
1 (16 ounce) can refried beans
1 (8 ounce) package cream cheese, softened
1 (16 ounce) container sour cream
8 ounces guacamole
1 (16 ounce) jar salsa
2 cups shredded cheddar cheese
1 bunch chopped green onions
1 large tomato, chopped
Directions:
1. In a medium bowl, blend the taco seasoning mix and refried beans. Speak the mixture onto a large serving platter or casserole dish.
2. Mix the sour cream and cream cheese in a medium bowl. Spread over the refried beans.
3. Top the layers with guacamole, then salsa. Place a layer of cheese, green onions and tomato on top. Serve with tortilla chips.
Before all the weekend festivities started, we went with Alicia and her family to their club for Burger Night on Thursday night. We split the short rib nachos:
I opted for a burger lettuce wrapped and topped it with onions, tomato, pickles and chipotle sauce. Sweet potato fries were my side dish.
Breakfast Friday:
I took my daughter to camp, ran some errands, then grabbed lunch for us to eat in the car. We were on our way to see the Selena Gomez concert at The Staples Center in Los Angeles. I ate a turkey sandwich from Ralph’s.
We checked into our hotel at LA Live, then met my sister in law, my niece and their friends at Wolfgang Puck for dinner. I ordered the Grilled Flat Iron “Steak Frites”, Crispy French Fries, Armagnac-Peppercorn Sauce:
Fabulous. My daughter and I shared the fries which were also delicious.
Apparently, it was Wolfgang Puck’s birthday so every table got a plate of mini cupcakes:
Both kinds were so good!
We had a great time at the concert. It was really fun to go with my daughter. Selena put on a great show!
Saturday morning, we ordered room service for breakfast. I had an egg white omelet with onions, spinach, cheddar cheese and sliced tomatoes on the side. I also had wheat toast.
We hit the road for San Diego. We ate a late breakfast so lunch was just some cheese, salami and crackers.
My family started to arrive and we all went to Tio Leo’s for dinner. I had the shrimp fajitas.
They might be the best fajitas I’ve ever had. Seriously.
Sunday’s breakfast was half a bagel and cream cheese.
I rarely eat bagels but I had bought them for my family and decided to have half of one. Also, I had a lot of cooking and prep work to do for the next day’s barbecue so having a fast breakfast made sense.
My husband picked up deli platters from Milton’s Deli for lunch. I made a roast beef sandwich and had pasta salad and cole slaw. Yum!
For dinner, we met the rest of my family at Buca di Beppo. We had a large group with a set menu. We shared a ton of stuff.

Dessert was Homemade Cheesecake and Chocolate Chip Cannoli (didn’t make the camera):
After dinner we headed off to Petco Park for the Celebrity Softball Game. We had a great time!
We had eaten such an early dinner, that we were all hungry by the time we got home. We made sandwiches from our lunch leftovers:
Monday’s breakfast was another half bagel with onion cream cheese.
Everyone came over for our barbecue lunch. There were tons of dips to enjoy.

The main event was hamburgers and hot dogs, complete with all the fixings including my favorite Burger Sauce.

After everything was cleaned up, we headed back to Petco Park for the Home Run Derby! We had a great time!!
What an incredible night!
Breakfast Tuesday:
For lunch, I had another sandwich and leftover orzo salad. My son had my phone so no photo.
Then, it was off to the final baseball event, the All-Star Game!
The American League beat the National League 4-2! And just like that, our crazy baseball weekend was over.
We did stop for dinner at Chianti Restaurant before heading home. I ordered the Tagliatelle Piccata (grilled chicken breast, wild mushrooms, lemon butter caper sauce):
And today it was back to our regularly scheduled program. Got up early and had my regular breakfast:
Went to Orange Theory with Alicia. Definitely kicked my butt today after my long weekend of indulgences.
I went to an appointment, then home for lunch. Half a turkey sandwich, veggies and ranch dressing.
We still have a fridge full of leftovers…I have a feeling that that will be dinner tonight!
