143.0...Loaded Baked Potato Dip
I can’t believe it’s been a whole week since I’ve blogged last! To reward your patience, I bring you a dip that will make you a hit at any party. I made it for a tailgate I went to and it was gone within minutes. Someone declared it “the best dip he had ever had in his life.” Make this Loaded Baked Potato Dip and watch your popularity skyrocket!
Loaded Baked Potato Dip (serves 8 to 10)
Recipe from Brown Eyed Baker
Ingredients:
16 ounces sour cream
1 (12-ounce) package bacon, cooked and finely chopped
8 ounces sharp cheddar cheese, shredded (about 2 cups)
2 green onions, thinly sliced
Directions:
1. Combine all ingredients in a medium bowl and refrigerate for at least one hour before serving to allow flavors to meld together.
2. Garnish with extra shredded cheese, crumbled bacon and chopped green onions. Serve with your favorite potato chips or pretzel crisps.
*Dip can be stored in an airtight container in the refrigerator for up to 1 week. Let sit at room temperature for 30 minutes before serving if it has been refrigerated for longer than an hour.
Tuesday night we went to Pizza Rev for dinner.
I don’t think I could ever get sick of it. It’s amazing.
Wednesday’s breakfast:
I went to the gym, then an appointment. Lunch was a turkey sandwich with veggies and ranch dressing.
That night we went to John and Kate’s house for a “break the fast” dinner. The spread Kate cooked was fabulous!!
I tried everything. There wasn’t a dud in the bunch. Everything was delicious! I had to try a bit of her dessert too!
Thursday’s breakfast:
I took the kids to school, then went to the gym. I made a few things for the tailgate that day.
Lunch was a messy, quick tuna salad.
Then it was off to the Chargers tailgate! I was in charge of the appetizers. Besides the Loaded Baked Potato Dip, I made Seven Layer Taco Dip and My Favorite Guacamole.
Someone else was in charge of the main event which were steak and chicken tacos! Yum!
The game was a success with a win against the Broncos!!
Friday’s breakfast:
I took the kids to school, then I went to Orange Theory.
Lunch was with some friends at Tabu Sushi. Miso soup:

After I picked up the kids from school, I took my son to basketball practice. Afterwards, we left for Orange County for the weekend. Along the way, we stopped at Sonny’s Pizza and Pasta in San Clemente. It was a cute, small Italian restaurant. I was excited to try it.
My meal started off with the house salad which was great!
My husband and I split a veggie pizza:
Eh. It wasn’t the best. Sigh.
We finally arrived at Pelican Hill Hotel and checked in and went to bed.
Saturday morning we ordered room service for breakfast. I had an egg white omelet with cheddar cheese, spinach, onions and sliced tomatoes on the side.
We spent all day at the pool. It was glorious.
I ordered a Cobb salad for lunch, my usual there.
For dinner, we went to Taco Rosa. My first impressions weren’t very good. You had to pay for chips and salsa AND they didn’t have guacamole because they were out of avocados. Huh???? There was a grocery store in the same area…...
Anyway, I ordered the shrimp fajitas which turned out to be good.
Breakfast Sunday morning was the same:
We hung out by the pool for a bit before coming back in to pack up. We ordered delivery from Newport Coast Pizzeria. I ended up ordering their Sizzling Chicken Salad. It had a choice of three veggies. When it arrived the veggies were all cooked and in with the chicken. No where did it say the veggies would be cooked. Not a fan of slimy, cooked veggies on my salad so out they went.
Their balsamic dressing was good though.
Then it was off to Disneyland!! We went on a ton of rides before heading to dinner at ESPN Zone. I’m not a fan of that restaurant but it had the shortest wait.
I ordered the Grilled Salmon which turned out pretty good actually.
Breakfast Monday was some almonds and a bar while walking in the park. Between all the rides, we stopped for lunch at Naples Ristorante in Downtown Disney. I ordered the Contadina Salad (chopped romaine, radicchio, endive, salami, provolone cheese, garbanzo bean, tomato, onion, cucumber, pepperoncini, Italian vinaigrette):
Good salad!!
After a few more rides, we called it quits and drove back to San Diego. We stopped at Firenze for dinner. I had the Grilled Salmon.
Everything is always good at Firenze!
Today’s breakfast:
Kiddos were off school today too. I went to the gym, then took my daughter to a party. I went over to UTC mall while I waited and had lunch at Tender Greens.
Herb Brushed Albacore, Tender Greens salad, roasted tomato soup. Yum!
Later on I took my son to basketball practice. I stopped at Sammy’s Woodfired Pizza for dinner. I had my favorite salad, The Chopped Chicken Salad.
It’s another crazy week ahead!
