140.4...Spinach Lasagna
Though all my Thanksgiving prep work today, I somehow found time to make a delicious Spinach Lasagna. It really wasn’t too much of a struggle…the recipe is really simple and easy! Perfect for a cold night!
Spinach Lasagna (Serves 9)
Recipe from Kraft Foods
Ingredients:
2 eggs, beaten
1 container (16 oz.) regular or low fat cottage cheese
1 package (10 oz.) frozen chopped spinach, thawed, well drained
3 cups shredded mozzarella cheese, divided use
1/2 cup grated Parmesan cheese
26 oz. marinara (homemade or store bought)
9 lasagna noodles, cooked
Directions:
1. Preheat oven to 350 degrees.
2. Mix eggs, cottage cheese, spinach, 2 cups mozzarella and 1/4 cup Parmesan in a bowl.
3. Layer 1 cup pasta sauce, 3 lasagna noodles and half the cottage cheese mixture in a 13x9 inch baking dish. Repeat layers. Top with remaining noodles, sauce and cheeses.
4. Bake 45 minutes or until heated through. Let stand 10 minutes before serving.
Thursday night I decided to make another taco salad with the “Taco Tuesday” leftovers:
Breakfast Friday:
After I took the kids to school, I went to the gym. I helped out in my daughter’s class then went to Urban Plates for lunch.
Seared albacore, roasted Brussels sprouts and sesame broccolini. So good!
For dinner, we went to Benihana with Alicia and her family. Onion soup and salad:
We shared some yellowtail and salmon nigiri:
I had the steak and shrimp with fried rice. Epic. Love this meal!
I went to bed full and happy.
I happily slept in a bit on Saturday. Breakfast was a tad bit different. I decided to scramble my eggs instead of poached.
Yes, that’s a giant bottle of Cholula hot sauce. It has a pump!
I got some stuff done around the house. Lunch was tuna salad, crackers and pickles:
I took my daughter to a friend’s house and then I went to the gym.
My son and I went to PF Chang’s for dinner. I had the Ginger Chicken and Broccoli with brown rice.
Since Thanksgiving is fast approaching, I need to clean out my fridge. I had some leftover refried beans so I had them with scrambled eggs, green onions and cheddar cheese for breakfast.
Really delicious and filling!
I went to Cathi’s cookie party, then came home for lunch. More tuna and pickles.
I put up our tree:
Dinner was Burger Night!
Turkey burger with cheddar cheese, lettuce wrapped with jalapeños, tomatoes, red onion, garlic aioli and sweet potato fries.
Today’s breakfast:
I went to Orange Theory, then ran a ton of errands. I picked up some White Bean Chicken Chili at the store so that was lunch. It was perfect on this rainy day!
I cooked and prepped the rest of the day in preparation for Thanksgiving. Dinner was the Spinach Lasagna and Caesar salad:
I’m officially exhausted!
