142.6...Broccoli Rabe with Garlic and Oil
To go with the Chicken Marsala on the Lighter Side that I made from the Skinnytaste Cookbook on Thursday, I also made her Broccoli Rabe with Garlic and Oil. It was a fabulous and easy side dish that went with the Chicken Marsala perfectly!
Broccoli Rabe with Garlic and Oil (Serves 4)
Recipe from Skinnytaste Cookbook
Ingredients:
1 bunch broccoli rabe (about 16 ounces)
2 tsp. kosher salt
1 Tbsp olive oil
5 garlic cloves, thinly sliced
1/4 tsp. crushed red pepper flakes
Directions:
1. Trim 1 1/2 inches off the stems of the broccoli rabe, discarding the trimmings, and cut into 2-inch pieces.
2. Bring a large pot of water and 1 teaspoon of the salt to a boil. Add the broccoli rabe and cook until slightly tender and bright green, about 2 minutes. Drain well and set aside.
3. Heat a large, deep nonstick sauté pan over medium-high heat. Add the olive oil and garlic and cook, stirring, until golden, about 1 minute. Add the broccoli rabe, pepper flakes, and the remaining 1 teaspoon salt. Cook, stirring, until heated through, 2 to 3 minutes. Serve hot.
Friday’s breakfast:
My husband took the kids to school and I got ready for Alicia’s birthday breakfast at Morada at The Inn at Rancho Santa Fe. Yes this was going to be breakfast number two but I get up too early to make it until late morning for breakfast.
I ordered the Harvest Frittata (goat cheese, mushrooms, spinach, squash, arugula salad):
It’s a good thing I ate earlier because this was not very good. It was really dry. I tried pouring on hot sauce but that did little to help. I only ate a few bites and called it a day. The food at Morada is usually good so I was surprised. In any case, we had a great time celebrating Alicia’s birthday!
I was hungry at lunch time so I whipped up some tuna salad, crackers and pickles.
I picked up the kids from school and took my daughter to cotillion that evening. My son wasn’t feeling so hot so he stayed home from his.
For dinner I reheated some Taco Soup that I had in the freezer.
This soup is SO good!
Saturday’s breakfast:
We went to my son’s basketball game, then El Pollo Loco for lunch. I ordered their Black Bean and Chicken Bowl. It’s low in calories, filling and delicious!
My son and daughter both went to friend’s houses so my husband and I went out to dinner, just the two of us, at Rimel’s in Del Mar. My meal started with a dinner salad with balsamic vinaigrette:
I ordered Seared Ahi Tuna with Wok’d Veggies:
It was really good! The veggies were great!
Sunday morning I was up super early to get my son up and out the door for his school trip to Yosemite for the week. He had to be at the school at 6:00AM. Luckily my husband took him. I could have gone back to bed but I decided it was the perfect opportunity to get some stuff done with the house being so quiet.
Eventually I had my usual breakfast:
It was off to the Chargers game! Since I now know the one spot that sells salads, I picked myself up one.
I knocked all the olives off and didn’t eat the croutons. I was still hungry after that so I found a place that has this build your own nacho bar. They were super confused when I asked for the nachos without the chips or cheese. Lol. I ended up with a bowl of chicken, guacamole, beans and salsa. I guess I forgot to take a photo of it but it was really good. I hope they have that next time!
After the game we went to Sammy’s Woodfired Pizza for dinner. My husband and I shared the Chopped Chicken Salad:
Ah, Monday. You arrive too quickly.
It was a quieter morning with only one child. :) Breakfast:
I took my daughter to school, then went to Orange Theory for a fabulous, butt-kicking workout.
I ran a ton of errands afterwards, including stopping for lunch at The Green Spot Salad Company. I had my usual Sesame Ginger Ahi Bowl, sauce on the side.
I did bring my mini Sriracha bottle from home. :)
The husband is working late tonight, so it’s just my daughter and I. A nice, quiet evening!
