138.6...Cheesy Beef Enchilada Rice Bake
I made a new recipe for dinner on Tuesday which hasn’t happened in a long time! I didn’t have a ton of time and this recipe was insanely easy. I love how everything goes in one dish and bakes in the oven. I can clean the kitchen and set the table and have everything ready by the time the dish is done.
I did feel that this recipe had way too much rice. I’m going to write the recipe as is but next time I am going to reduce the rice amount. This is good by itself or would be a great burrito filling!
Cheesy Beef Enchilada Rice Bake (Serves 8-10)
Recipe from Picky Palate
Ingredients:
3 cups dry short grain white rice
15 ounce can black beans, drained and rinsed
10 ounce can diced tomatoes with chiles
4 ounce can green chiles
1/2 tsp. kosher salt
1 tsp. ground cumin
1/2 tsp. freshly ground black pepper
1 pound cooked ground beef, lightly seasoned
10 ounce can enchilada sauce
2 cups Mexican blend shredded cheese
Directions:
1. Preheat oven to 350 degrees and spray a 9x13 inch baking dish lightly with cooking spray. Cook rice according to package directions then place in a large bowl.
2. To rice bowl, add black beans, green chiles, diced tomatoes, salt, cumin and pepper. Stir to combine then transfer to 9x13 inch baking dish. Top evenly with cooked ground beef then pour enchilada sauce evenly over beef. Top with shredded cheese then bake for 20-25 minutes, until hot and cheese is melted. Serve warm.
Yesterday’s breakfast:
After I took the kids to school I went to Orange Theory. I got my nails done then came home for lunch. I had the rest of the Trader Joe’s turkey meatballs and roasted Brussels sprouts.
We went to my son’s basketball game then Tio Leo’s for dinner. I ordered the Pollo Asado Rice Bowl which was pretty good!
Today’s breakfast:
After I dropped the kids off I went to the gym for an upper body weight workout.
I had a dentist appointment and lunch at Urban Plates. Love that place. That’s twice this week!
I picked up the kids from school and took my daughter to her tennis lesson.
Dinner was leftover Cheesy Beef Enchilada Rice Bake which tasted even better today! I topped it with green onions and died tomatoes.
The rice bake made a ton so the rest went into the freezer. Hoping it freezes well. Fingers crossed!
