137.2...Quinoa Greek Salad
Tuesday night my husband was out so I did what I usually do: make salmon. Since he doesn’t eat fish, I usually make it when he’s not around. To go with it, I whipped up an easy Quinoa Greek Salad which was delicious!
Quinoa Greek Salad (Serves 6)
Recipe adapted from Food.com
Ingredients:
2 cups chicken stock
1 cup quinoa
1/2 cup red pepper, diced
1/2 cup green pepper, diced
1/2 cup cucumber, diced
1/4 cup green onion, diced
1/2 cup cherry tomatoes, cut in half
1/4 cup red onion, diced
3 ounces feta cheese (reduced fat fine)
Dressing:
1/4 cup lemon juice
2 Tbsp. olive oil
1 tsp. minced garlic
1/2 tsp. oregano
Pepper, to taste
Directions:
1. In a saucepan, bring stock to a boil. Stir in quinoa. Reduce heat to medium low and cover. Cook 15 minutes, until liquid is absorbed.
2. Transfer to a large bowl and cool.
3. Stir veggies and cheese into cooled quinoa.
4. Whisk together dressing ingredients. Pour over quinoa mixture and toss.

Wednesday’s breakfast:
I took the kids to school, went to a school event, then went to Orange Theory. I ran some errands and stopped for lunch at Urban Plates.
Standard Urban Plates order.
We went to my son’s basketball game that evening, followed by dinner at Tio Leo’s. I ordered the Camarones Rancheros with a salad instead of rice and beans.
Eh. This wasn’t that great. I’ll stick to my usuals there from now on.
Thursday’s breakfast:
After I dropped the kids off at school, I went to the gym, followed by my tennis lesson.
I had some errands to run and also stopped at Green Spot Salad Company for my Ginger Sesame Ahi Bowl.
Last night I made the best pasta ever. I cannot wait to share the recipe with you.

The usual morning of school drop off and an hour at the gym. I came home to try to attack the mess that is my desk. Lunch was leftover Quinoa Greek Salad, Trader Joe’s hummus & kale dips and carrots.

ReplyDeleteI think being intentional in food choices is crucial to losing weight and keeping it off. I've seen a lot of people start out great in their diet but usually, after a few days, it's back to the "usual". I think what makes a weight loss diet effective is that it should be short-term, low carb and easy to follow. That means if you are a going to work, the food included in the diet plan should be easily brown-bagged and ready to go.
