134.4...From One Extreme to Another
Wednesday’s breakfast was the usual:
I took the kids to school, then got ready for a women’s event that I was on the committee for. The event had a delicious brunch: omelet bar, bagels, salad, fruit and more.
Really good!
I went to my son’s school baseball game then came home. Dinner was simply pasta and salad. Trying to ease myself slowly back into cooking.
Thursday’s breakfast:
After I took the kids to school, I went to the gym. I ran some errands and stopped at Napizza for lunch. Greek Quinoa Salad:
Love.
I packed up and we picked up the kids from school and headed to the airport. Our next destination: Deer Valley, Utah! From hot weather in Cabo, to snow in Utah. Talk about extremes!
I ate some peanuts on the plane but by the time we arrived at the Stein Eriksen Lodge, I was hungry. We had a quick dinner before heading to bed.
French onion soup:
Yesterday I got ready for the day with my special sweatshirt meant for our annual family ski trips.
Yeah. Snow and I don’t mix. The kids and my husband took off for the slopes while I enjoyed a leisurely buffet breakfast.
I caught up on email and eventually went to the gym for a 30 minute treadmill run. Normally I run longer but I didn’t realize how hard it is to run at higher elevations. Now I know why boxers train at high altitudes. It was HARD.
Afterwards I ate an apple and this bar that they had in the gym:
I came back to the room to enjoy our view:
I definitely earned this:
For dinner, we went to Vinto Pizzeria. We shared the Baked Goat Cheese (mixed with pesto, roasted tomatoes, roasted garlic, and parmesan, served with grilled flatbread):
This was delicious!!! This easily could have been my dinner.
I ordered the Chicken Piccata.
It was just ok. The funny thing is is that we were told to go to this restaurant because the pizza was really good but no one ordered pizza. Lol. Will have to go back and try the pizza for sure.
We did try their homemade gelato. My husband and I shared the Highwest Stracciatella:
It wasn’t your average stracciatella, it hit a bit of whiskey in it! It was delicious!
This morning it was back to the breakfast buffet.
The bacon is cooked with maple syrup and might be the best bacon I’ve ever had!
More of it was necessary with my piece of Rice Krispy French Toast. :)
I’m definitely off to the gym now! No running for me though! ;)
Do high altitudes affect you? I’ve never had this problem before but it’s getting me good this time!
