As you’ve probably noticed, I haven’t been posting as much lately. Honestly, we’ve been traveling a ton and life has just been way too busy to keep up with my blog. I’d like to get back to posting on a more regular basis, but for now, I need to take a break. I can’t leave you with just that so I thought I’d share some photos from the cooking class I went to today with Phillis Carey at the La Jolla Community Center.
The class today was “Spring Italian Dining”. Our appetizer recipe was Shrimp Bruschetta:
The shrimp mixture was so delicious! It would be perfect on pasta too!
We did enjoy a cocktail….Limoncello Prosecco Sparkler:
Might be a new favorite! So refreshing.
Our main plate had three different recipes:
Porchetta-Style Stuffed Pork Tenderloins
Porcini and Button Mushroom Risotto
Haricot Vert in Arugula Salsa Verde
While they were all fabulous, the risotto stole the show! It’s a winner for sure!
Dessert was Caprese Chocolate Almond Torta:
So yummy…tasted like a candy bar!!
