145.6...Chicken, Cashew and Vegetable Stir-Fry
Last night’s dinner rocked. It came together quickly, was healthy and tasted amazing. I made it once before a long time ago but glad I brought it back!
Chicken, Cashew and Vegetable Stir-Fry (Serves 4)
Recipe from Self Magazine, Summer 2007
Ingredients:
2 tsp. cornstarch
3/4 cup low-sodium chicken broth
1/4 cup hoisin sauce
2 Tbsp. low-sodium soy sauce
1 Tbsp. chopped ginger
2 cloves garlic, chopped
1 lb. boneless, skinless chicken breasts, cut into 1/2-inch cubes
1 Tbsp. peanut or sesame oil
1 zucchini, cut into 1-inch pieces
1 yellow squash, cut into 1-inch pieces
1 red bell pepper, cored, seeded and cut into 1-inch pieces
1/3 cup chopped cashews
Directions:
1. Dissolve cornstarch in broth in a bowl; stir in hoisin and soy sauce; set aside.
2. Toss ginger, garlic and chicken in another bowl.
3. Heat oil in a large pan over medium-high heat; cook chicken until nearly cooked through, 4 minutes.
4. Add zucchini, squash and pepper; cook, stirring, 2 minutes. Add reserved sauce; cook, stirring until sauce is thick, 2 minutes.
5. Add nuts. Serve over rice.
My lunch yesterday was the rest of my Milton’s Californian Sandwich from Sunday along with some leftover salad.
I picked up the kids from school, took my son to basketball practice, then whipped up Chicken, Cashew and Vegetable Stir-Fry for dinner.
Today’s breakfast:
After I took the kids to school I went to spin class for a super sweaty workout. Afterwards, I went to Phillis Carey’s cooking class. Today’s class was called: Quick and Easy EveryNight Cooking.
The first recipe was Mexican Corn Soup with Chicken, Bacon and Tortilla Strips:
This one was my favorite. I need to make this ASAP!!!
The second recipe was Roasted Pork Tenderloin with Asian Sesame Plum BBQ Sauce:
Unique sauce…very tasty! Would be good on ribs too!
The next recipe was Boursin and Chive Stuffed Chicken Rolls with White Wine Shallot Sauce:
How could anything with Boursin cheese be bad right!?! It was delicious! Another winner!
Next was Quick Shrimp and Sausage Paella:
It definitely came together quick..a nice cheat on the real thing!
Dessert was Peanut Butter Swirl Chocolate Cream Cheese Brownie Sundaes with Ice Cream and Rich Chocolate Sauce:
Epic. I mean really good. Phillis always knows how to put on a great class!
After class, I took my daughter home from school, then went to my son’s flag football game. Now it’s time to chill at home!
