146.2...Relaxing in the Desert
On Thursday night I made one of our all-time favorite pasta dishes: One-Pot Cheesy Italian Pasta and Chicken:
It’s beyond easy to make and tastes amazing.
Friday’s breakfast:
I picked Alicia up and we headed to my house in Palm Desert for the weekend. My mom came over and we went to our club for lunch.
BLT & fries:
We went back to the house as I had some repair people coming over. For dinner, we went to Mitch’s on El Paseo. Alicia and I shared a bunch of dishes.
Don Juan Roll (shrimp tempura, spicy crab, asparagus, avocado topped with seared albacore tuna, crunchy jalapeño, cilantro ponzu sauce):
Yellowtail Sashimi Jalapeno Yuzu (sliced hamachi, sliced jalapeno, yuzu, ponzu sauce, habanero tobiko):
Lemon Roll (spicy snow crab, asparagus, cucumber, avocado, rolled and topped with yellowtail, fresh salmon and lemon slices):
Jalapeño Poppers (fresh jalapeño stuffed with crab, spicy tuna, and cream cheese lightly tempura, drizzled with kabayaki sauce and spicy aioli):
The food was excellent. Everything was delicious. My mom and her friends go there all of the time and love it. But on Friday night, we had the server that my mom usually has but something was wrong with her that night. I won’t go into all of it because it would take me forever to type but she had to have been on something. I’ve never seen anyone mess up that much and have no clue what was going on. It was the most bizarre experience I’ve ever had in a restaurant. Good thing the food was good or I’d never go back!
Saturday morning we ordered in for breakfast.
Egg whites, cheddar cheese and Canadian bacon on an English muffin with a side of fruit.
Dina arrived and we decided to go shopping on El Paseo. We stopped for lunch at Pacifica. I had the Farmers Chopped Salad with Chicken (celery, feta cheese, tomatoes, corn, tortilla strips, iceberg, romaine, garbanzo beans, chipotle ranch dressing):
Pretty darn good salad! We kept shopping then came home to hang out and get ready for dinner at Mastro’s Steakhouse. Alicia and I shared a couple appetizers.
Hamachi with Crispy Onions (hamachi sliced sashimi style served with fried thinly sliced Mexican green onions, topped with ponzu truffle oil and truffle salt):
Jalapeño Tuna Sashimi (ahi tuna sliced sashimi style topped with fresh squeezed key lime juice, thinly sliced jalapeños and ponzu chili sauce):
I thought both were just ok. The real star of the show was the Gorgonzola Mac & Cheese that we all shared with our steaks.
Seriously, it was out of this world! The steak and the veggies were good too. :)
After dinner we went to The Parker Palm Springs for a drink. The decor there was a lot of fun and we had a good time exploring and snapping lots of photos.
We ordered in again for breakfast on Sunday. Two eggs over easy, bacon, hashed browns and toast:
We hung out for a bit and then headed home. We stopped for lunch at In N Out.
Just looking at this makes me hungry.
Once I got home, I showered and got ready for the Coldplay concert at Qualcomm with a bunch of friends!
I can’t say that I’m a super big fan of Coldplay but their concert was absolutely fantastic! It was so well done and just made you feel so happy! The lighting was incredible and everyone in the audience wore wristbands that lit up in coordination with the music. I thoroughly enjoyed it!
As if things couldn’t get any better, we stopped for In N Out on the way home.
Yes. I had In N Out Burger twice in one day. Not sure if I should be ashamed or proud!
Monday was rough. Lol. Breakfast was the normal.
I took the kids to school, then met my trainer at the gym. I think I had set the bar so low that morning that it wasn’t as bad as I thought it was going to be.
I came home to get some stuff done, then headed out for some errands. I stopped for a quick sushi lunch at Sushiya with a friend. I had the salmon, yellowtail and tuna nigiri:

I took my daughter to the orthodontist to get her braces off (yay!) then to my son’s flag football game.
Dinner was reheated One-Pot Cheesy Italian Pasta and Chicken and a salad.
Today’s breakfast:
I took the kids to school, then to spin class, then home to shower. Rest of the day I’ve been cleaning out my inbox which always manages to become a huge mess in just a few days.
Tonight I’m going a fun event with a couple of friends. Happy Tuesday everyone!
