145.2...Keeping it Clean
It’s been a pretty clean week of eating for the most part. Monday night’s dinner was Trader Joe’s Four Cheese Ravioli as well as their turkey meatballs. I sautéed some zucchini to go with it.
Tuesday’s breakfast:
After I took the kids to school I went to Orange Theory. Afterwards I had this RXBar for a snack:
Then it was off to another Phillis Carey cooking class! This class was “Holiday Entertaining-Champagne and Chocolate”. Our class had a holiday cocktail: Clementine Rosemary Prosecco Cocktail:
Very good and refreshing!
Our salad course was Arugula Salad with Oranges, Roasted Fennel with a Balsamic Mustard Vinaigrette:
I never knew roasted fennel was so good!
Next up was Fusilli with Shrimp in Sun-Dried Tomato Cream with Fresh Basil:
This was outstanding! Loved the sauce!
Our next plate had two recipes:
Beef Tenderloin Stuffed with Prosciutto and Parmigiana-Reggiano
Sautéed Spinach with Olives, Raisins and Pine Nuts
The steak was fork tender and fabulous. The spinach was a fun and different twist on plain-old sautéed spinach.
Dessert was Tiramisu Cheesecake with Chocolate Ganache and Kahlua Cream Topping:
Spectacular! Loved it! And it’s no-bake!
I took my son to Bar Mitzvah tutoring after school then came home to reheat the previous night’s leftovers for dinner.
Wednesday’s breakfast:
After I took the kids to school, I went to spin class. I had this bar afterwards:
For lunch, I met some friends at the new True Food Kitchen at the UTC mall. I had the Poke Bowl (wild caught albacore, avocado, quinoa rice, mushroom, snow pea, cucumber, cashew, turmeric ponzu):
Delicious!
Dinner was tacos!
Yesterday’s breakfast:
I took the kids to school then went to the gym for a run on the treadmill.
I came home to get some stuff done around the house. I had this Wallaby Lemon Greek Yogurt with almonds for a snack. This yogurt rocks!!
Lunch was leftover steak and bread from Davanti. I added Dijon mustard to the bread.
On the way to pick up the kids, I had a toasted English muffin with some cheese, salami and hot sauce. Yum!
Last night I had a little get together at my house. We had pizza and a antipasto platter.
Today’s breakfast:
I took the kids to school, then went to a meeting. This bar was my snack:
These bars are good too but I prefer the RXBars.
I went to a doctor appointment, then lunch at NaPizza.
I had my usual Greek Quinoa Salad with Salmon.
I picked up the kids from school and came home. Chobani vanilla yogurt and sliced almonds for a snack:
We are going out to sushi with friends tonight. Happy Friday!
