146.2...Pimento Cheese Pinwheels
First of all, Happy Birthday to me!!! I can’t wait to celebrate tonight! But first, let’s rewind. Last Sunday I went to Dina’s annual Christmas party. Everyone brings a hearty appetizer and there’s always so many yummy things to try. This year I brought Pimento Cheese Pinwheels which were a hit!
Pimento Cheese Pinwheels
Recipe from The Today Show
Ingredients:
2 cups white cheddar cheese (shred it yourself - it makes a huge difference!)
1 cup mayonnaise
1/2 cup shredded Parmesan cheese
6 oz. roasted red peppers, diced
1/4 cup chopped pecans
1/4 cup thinly sliced scallions or green onions
1/4 tsp. Tabasco sauce
1/4 tsp. Cajun seasoning
1/4 tsp. Worcestershire sauce
1 package frozen puff pastry, defrosted
All-purpose flour, for cutting board
Directions:
1. Preheat oven to 350 degrees.
2. In a large bowl, combine all ingredients.
3. Unfold one sheet of puffed pastry onto lightly floured cutting board. Roll out the pastry with a rolling pin.
4. Spread the pimento cheese about 1/2-inch thick. Roll up jelly roll style. (The log can be frozen at this point if doing ahead.)
5. Slice to make pinwheels. Place pinwheels on a greased cookie sheet. Bake until golden brown, about 25-30 minutes.
Last Friday night we went with Joe, Alicia and their kids to Ototo Sushi for dinner.

We went to lunch at Smashburger. My husband and I shared the Baja Cobb Salad:
As well as a burger lettuce wrapped:
We learned that their burger is too messy to lettuce wrap. Lol.
The kids got haircuts then we came home to get ready for a holiday party for my husband’s YPO group. It was held at a hanger at Palomar Airport and was a 40’s USO theme. The decor was awesome but there really wasn’t a ton of food. We had to ditch the party a bit early because we were starving. We went to Bentley’s Steak & Chop House. I had a shrimp cocktail to start:
Then I had the Chilled Ahi Stack (won ton chips with ancho chili mayo, ginger wasabi aioli, diced cucumber, avocado, and cubed ahi, garnished with marinated seaweed):
This was just ok. I expected something different. Boo.
Sunday’s breakfast:
Mid-morning snack: toasted English muffin with salami and cheese:
Lunch was leftovers of cheese ravioli, turkey meatballs and zucchini:
Later on I had some cheese and crackers:
Then it was off to Dina’s Christmas party!

Monday’s breakfast:
I dropped the kids off a school, then went to workout with my trainer at the gym.
I came home to grab a snack before running off to a meeting.
Lunch was Urban Plates:
Later on I had this bar for a snack:
I brought the kids home from school. Dinner was tacos:
Tuesday’s breakfast:
I took the kids to school, then went to the gym for run on the treadmill. For a snack when I got home, I had half a salami sandwich:
I wrapped most of my holiday gifts. Lunch was taco leftovers:
On the way to my son’s basketball game, I had a RXbar:
That evening was Bunco at Alicia’s. It was potluck so everyone signed up to bring something. Alicia provided the ham and turkey.

It was our annual gift exchange bunco which is always a blast!

Breakfast on Wednesday:
After I took the kids to school, I went to Orange Theory, then got my nails done. Lunch was Luna Grill:
I had a bar for a snack later on on my way to a PTO meeting:
That evening we went to the Marriott Marquis for the Holiday Bowl Director’s Dinner. Our meal started with a salad:
The entree was steak and a crab cake but I guess I didn’t take a picture of it. It was pretty good actually!

Thursday’s breakfast:
I dropped the kids off at school and came home to get dressed. I had a snack later of an English muffin, cheese and salami:
I went to Fashion Valley mall to meet my husband and a friend. We had lunch at Blue Smoke Sushi. Miso soup:
Salmon, yellowtail and tuna nigiri:
I picked up the kids later from school. That evening I went to Davanti with some friends to celebrate my birthday. We shared a ton a delicious dishes.

I had yogurt and almonds Friday morning before taking the kids to school:
I changed up the breakfast because I met my friends at Veladora at Rancho Valencia for more birthday celebrations!
Two eggs over-easy with bacon, potatoes and toast:
After breakfast I did some grocery shopping so I picked up some sushi for lunch.
Last night I celebrated my birthday with my family and Alicia and her family at Benihana!
