149.4...Three-Cheese Lasagna
I actually cooked a new recipe for dinner last night. I can’t even remember when I did that last. Luckily, it turned out amazing, was relatively easy to make and was a hit all around.
Three-Cheese Lasagna (Serves 6)
Recipe from Cooking Light, March 2013
Ingredients:
1 cup part-skim ricotta cheese
1/4 cup fresh flat-leaf parsley, divided
1 Tbsp chopped fresh oregano
1 tsp. chopped fresh thyme
1/2 tsp. kosher salt
1/2 tsp. freshly ground black pepper
6 ounces shredded part-skim mozzarella cheese, divided (about 1 1/2 cups)
1 ounce fresh Parmesan cheese, grated, and divided (about 1/4 cup)
1 egg, lightly beaten
1/4 cup torn fresh basil
1/8 tsp. ground red pepper
4 garlic cloves, minced
1 (24-ounce) jar lower-sodium pasta sauce
9 cooked lasagna noodles
Cooking spray
Directions:
1. Preheat oven to 375 degrees.
2. Combine ricotta, 2 Tbsp parsley, oregano, thyme, salt, black pepper, 1 cup mozzarella, 1 Tbsp Parmesan cheese, and egg in a small bowl. Combine basil, red pepper, garlic and pasta sauce in a medium bowl.
3. Cut the noodles into 9 (7x2-inch) pieces; discard remaining pieces. Spread 1/2 cup pasta sauce mixture in bottom of an 8-inch square glass or ceramic baking dish coated with cooking spray. Arrange 3 noodles over pasta sauce mixture; top with about 2/3 cup ricotta mixture and 3/4 cup pasta sauce mixture. Repeat layers twice, ending with 1/2 cup pasta sauce mixture. Top evenly with the remaining 1/2 cup mozzarella and remaining 3 Tbsp Parmesan cheese. Bake at 375 degrees for 40 minutes.
4. Preheat broiler to high. (Keep lasagna in oven.)
5. Broil lasagna for 2 minutes or until cheese is golden brown and sauce is bubbly. Let stand 10 minutes. Sprinkle with remaining 2 Tbsp parsley.
Last Tuesday night I took my daughter to Pizza Rev for dinner. I love this place.
Wednesday’s breakfast:
I took the kids to school then went to Orange Theory Fitness. I went to the mall to run some errands and meet some friends for lunch at True Foods. I had the Cashew Pad Thai with Shrimp. It was very good!
I went to my son’s baseball game then home to make dinner.
Trader Joe’s Orange Chicken, brown rice and steamed broccoli.
Thursday’s breakfast:
After I took the kids to school, I went for a run/walk on the treadmill at the gym. I got my nails done and had lunch at Luna Grill.
Greek Salad with a Chicken Kabob.
My son had a basketball game that evening and before we left I had some spaghetti with sautéed zucchini and marinara:
Friday’s breakfast:
After drop off, I went to hot yoga at Core Power. I came home to get dressed and get some work done. Lunch was a turkey and avocado sandwich with a salad.
That evening the kids had cotillion. We all went to Joe and Alicia’s for dinner in between all the cotillion drop-offs. We had Gor Gai Thai take out.
Saturday’s breakfast:
My son had hurt his thumb in his baseball game on Wednesday and it was still bothering him so I took him to see my sister in law Julie who is a hand surgeon. We got it x-rayed and it turns out he actually broke it! She casted it and we were on our way. Poor kid.
I did get him Taco Bell for lunch. I tried their Power Bowl with Chicken which wasn’t bad!
My son went to a party that night so we took my daughter out to dinner at Trattoria I Trulli. My husband and I shared the Caprese salad:
I ordered one of the specials of the night: Pappardelle with Boar:
Really good but not as good as the one at Piacere Mio.

Sunday’s breakfast:
I got some stuff done around the house. I made a turkey sandwich for lunch but I really wasn’t into it when my husband brought home carne asada fries from Cotijas.
Those were much better than my turkey sandwich.
We all went over to Yamia’s house for a “Seis de Mayo” party. I enjoyed some yummy tacos and desserts but didn’t take any photos. We had a great time with many of our good friends!
Yesterday’s breakfast:
After drop off, I met my trainer at the gym. I ran some errands and met some friends at Sweetfin for lunch.
I love that place!
I went to a meeting then brought the kids home from school. Three-Cheese Lasagna and salad was dinner.
Today’s breakfast:
After school drop off I went to spin class. Then it was off to a Phillis Carey cooking class. Today’s class was called “May Mash-Ups”. Basically just combining different styles of food to create something new and yummy!
The first recipe was Smoked Salmon Dutch Baby with Dilly Creme Fraiche, Pickled Onions and Capers:
This was outstanding. The pickled onions were especially good!
Second was French Onion Soup Burgers with Gruyere, Arugula and Mustard-Crusted English Muffins:
Super delicious! The onions were unreal!
Next was Caprese Quesadillas:
Loved this! There was a pesto topping that really made it!
The next recipe was Mexican Chicken Lasagna:
Loved this too! Will make this one soon..my husband will love it.
Dessert was Cheesecake Factory’s Carrot Cake Cheesecake:
I have a weakness for carrot cake so this was really up my alley. Loved it!
Tonight is Bunco! More fun and good eats ahead!
