150.0...Madison's Favorite Beef Tacos
Last week I made some pretty delicious tacos. They were made in the slow cooker which made it super easy. The recipe is from the Skinnytaste Fast and Slow Cookbook which does not disappoint!
Madison’s Favorite Beef Tacos (Serves 8)
Recipe from: Skinnytaste’s Fast and Slow Cookbook
Ingredients:
2 pounds 93% lean ground beef
1 small onion, finely chopped
1/4 cup finely chopped red bell pepper
2 garlic cloves, crushed
3 tsp. ground cumin
2 tsp. chili powder
2 tsp. sweet paprika
1 tsp. dried oregano
2 tsp. kosher salt
1 cup tomato sauce
1 bay leaf
16 hard taco shells
2 cups shredded lettuce
2 plum tomatoes, chopped
1 cup shredded cheddar cheese
Directions:
1. In a large nonstick skillet, cook the beef over high heat, using a wooden spoon to break the meat into small pieces as it browns, 4 to 5 minutes. Add the onion, bell pepper, garlic, 2 tsp. of the cumin, the chili powder, paprika, oregano, and salt. Cook, stirring, until the vegetables soften, 2 to 3 minutes. Transfer to a slow cooker and add 1/2 cup water, the tomato sauce, and bay leaf.
2. Cover and cook on high for 3 hours or on low for 6 to 8. Discard the bay leaf and add the remaining 1 tsp. cumin.
3. Heat the taco shells according to the package directions. To assemble, put 1/4 cup of the beef mixture into each shell and divide the lettuce and tomatoes evenly among the tacos. Top each with 1 Tbsp cheddar and serve.
Last Wednesday was the last upper school PTO meeting of the year so lunch was provided.
It was leftovers from the school event I was at the night before. Tamales, ceviche and salad.
For dinner that night I made Easy Chicken Nuggets (recipe to come), sweet potato fries and salad. I got the recipe for the nuggets at a cooking class that I had went to with my daughter awhile ago.
Thursday morning I woke my son up super early for our flight to Houston, Texas. For his Bar Mitzvah gift, I promised to take him to a Houston Rockets (his favorite basketball team) game in Houston. Thursday was the day! Game 5 of the playoffs!
We got the airport and grabbed some food for the plane. Breakfast burrito for me:
We landed and headed to the Four Seasons Hotel to check in. We had lunch there. We shared Chips & Queso:
I had the Lobster Tacos:
Then we walked across the street to the Toyota Center to check out the stadium and do some shopping.
We came back to the hotel to chill for a bit before heading to the game. The Warriors happened to be staying at our hotel so we got to see all of them leave for the game.
Then it was game time!
I had a turkey burger and fries:
We had the best time! Didn’t hurt that the Rockets won!! Too bad I couldn’t say the same for this past Monday’s game. :(
After the game we came back to the hotel and went to their restaurant for snacks. I had the chips and guac.
We got to see all the Warriors players come back.
Breakfast Friday morning was room service. Two eggs over easy, bacon and toast:
We headed to the airpot and flew back to San Diego. I had a cheese plate on the plane.
I picked up my daughter from school, came home and packed for Memorial Day Weekend in Palm Desert with Alicia, her daughter and Kate and her family.
We stopped for dinner at our club before hitting the road for Palm Desert. I had the salmon:
We got to Palm Desert, opened some wine and relaxed!
For breakfast on Saturday we went to our club. I had an egg white omelet with sliced tomatoes and wheat toast:
For lunch we brought in sandwich platters from Manhattan in the Desert. Roast beef sandwich with cole slaw:
We went to dinner at Castelli’s. My husband and I shared a Caesar Salad:
Kate, Alicia and I split the Fettuccine Alfredo and Eggplant Parmesan which are amazing!
Alicia and I split the Pollo Giovanni (charbroiled breast of chicken topped with a touch of marinara, prosciutto, and mozzarella in a Marsala wine, mushroom, and diced tomato sauce):
Also good! I’ve never had a bad meal here.
It was John and Kate’s 16th wedding anniversary and John got Kate a beautiful lemon cake.
Yum!
Breakfast Sunday was at the club. I split a breakfast burrito with my husband.
Lunch was sandwich leftovers.
We went to dinner at Shogun.
Seriously love that place.
Monday’s breakfast was at the club again. I need to show you the giant big gulp size Bloody Mary they have:

We packed up and headed to San Diego. On the way we stopped at In N Out. Cheeseburger and fries:
That night we went over to Joe and Alicia’s for dinner.
BBQ chicken, corn, salad and sweet potato fries. A delicious way to end the long weekend!
Yesterday’s breakfast:
After I took the kids to school, I went to Orange Theory.
Lunch was with some friends at Flower Child. I had the Thai Cashew Quinoa with Salmon which was delicious.
Dinner was with the kids and Alicia and her daughter at Ototo Sushi.

After taking the kids to school I went to work out with my trainer. I went to an appointment afterwards, then lunch at Urban Plates:
Ahi with Miso Sauce, Brussels Sprouts and Chickpea & Kale soup.
I picked up the kids and took my son to get his cast off. My daughter had her pinky finger x-rayed because it was hit with a ball and had been bothering her. It was broken. !!!!! One cast off, one splint on. Jeez.
We went to dinner at Island’s.
Turkey burger and boring slaw so I ate some of the kids’ fries. Balance. :)
